Stir Fry Mala (麻辣香锅) : Homecooked Mala : Haidilao Basic Stir-Fry Sauce

  • What's the best comfort food when it come to pair it with a raining day like today. A super chilling stay home Saturday.
    Off to the nearest mall to grab the freshest greens & mushrooms as well as our favourite crayfish & tiger prawns that will be adding into our mala hotpot.
    If course not forgetting the frozen sliced fatty pork belly & pork collar that we always love to have it with our mala.
    Cooking the mala hotpot is the easiest if all.
    But the preparations of the ingredients & pre cooking then took us quite awhile to get it all ready for the finale stir frying.
    Always remember to pwash your greens throughly to make sure all the chemicals pesticide & fertilizers are off them. Here we have today mega portions of our mushrooms which consists of the oyster mushrooms, brown mushrooms, black fungus mushrooms. Not forgetting our favourite greens which is the broccoli, french beans & bamboo.
    Next will be the seafood, crayfish & tiger prawns. Looking at the fat & juicy crayfishes, it is really a must to have that goes so well with mala.
    Next will be our instant noodle which we gott give it a semi cooked & cooling it with ice to stop the cooking process as it will be mixed with the stir fry towards the end to give it a great soak in the mala broth.
    Other ingredients which we love to have of course is the cocktail sausages & fish dumplings to make it a wholesome meal.
    Next will be the frozen sliced pork, best to separate them before hand so that they won't be clumped together when they are mixed with the mala sauces.
    Next will be the pre cooking session to make sure all the vegetables, mushrooms & seafood are at least 80% cooked.
    Final step comes the most important part which is of course the mixing & stir frying.
    Our ratio of the mala sauce, 2 packets of HDL stir fry mala paste & 1 packet of HDL soup mala paste.
    Heating the wok up & adding our favourite olive oil to work the wok up in fiery temperature before adding in the mala sauces.
    & there goes the mixing, with the pork first in & stir frying them up & adding in the fish dumplings, susgaes, mushrooms & greens & last but not least the crayfishes & prawns.
    When all is well mixed & cooked, off the fire & add in the instant noodles to give everything a final mix & here we have our mala hotpot ready for our hungry stomach.
