    All too often I come across people who have purchased some expensive knives and then skimp on the sharpening system. Once you invest in a good sharpening system, surprise surprise, you have to maintain it. If you use sharpening stones (or even sharpening rods), you need to have a flat working surface to get the best and most consistent result. The small amount of maintenance is well worth it. Great info and thanks for the vid. Sharp blades all.

      David, this is a perennial issue. I have reviewed some cheap sharpening systems and I make a point in them to say that these are NOT a good idea. Get the very best sharpening system that you can afford (be willing to spend 10X as much as you do on a knife - rule of thumb). If you have a good sharpening rig with good stones then you will find so much more joy in the hobby, even if, like me, you stick mostly to budget knives.

      @@CanadianCuttingEdge 100%. Almost all of my knives are sub AUS$250 (about US$140 or CA$180) and most below AUS$150 and all really benefit from a good edge - I use my knives and I can't use them blunt!! As for joy (for me anyway) - it's the feeling you get after sharpening and your grind lines/bevels/edges/angles are exactly how you like them and the blade falls through paper or creates fine wood curls etc. 😲😀.     The resin the Venev stones use is phenolic that is quite modified so it wears some. I would suggest a coarser grit to dress with than the stone for faster dressing and better performance of the stone after dressing. Use either black silicon carbide or brown aluminum oxide as they are the least friable and will resist breaking down better. Nagura stones are great for cleaning up between dressing, much faster and not nearly as much of a mess.

      I had to use the grit I had on hand (Unfortunately I don't have the funds right now to get other sizes of silicon carbide grit). I was mostly showing the method in the video, and I agree with you coarser than the stone is much preferred for speed of processing.

    How long before dishing the glass plate ? the carbide and diamonds are harder then the glass are they not ?

      It depends on how much attention you give to using the whole surface of the glass, and how much you use it. My current glass has been used for about 7 years and it is still very flat - I cannot feel or see any dishing but I am sure there is a tiny bit, but not enough to be concerned about.

    Is it not easier to draw a lines like on stones to see better when u make it even ?

      That is a very good question.
      I choose not to use lines because the overall surface of this type of diamond "stone" is flat already. I would use lines on silicon carbide stones because those can get significantly dished our bowl shaped from being used more in the center than at the ends but diamond stones like these are only dished by an extremely tiny amount, if at all. The issue isn't that I need to make it flat, I need to remove a layer of diamonds from the surface, but only an extremely thin layer but if I used a pencil or marker to write on the surface I would have to remove WAY more diamonds than I want to take off, because some of the pencil graphite or marker would still be in the low spots even after I am done. I just want to make the surface rough again, not flatten it.
      I hope that makes sense.

    Very interesting video. I use a 2-sided 3"x8" diamond coated Sharpal steel plate, but I'm thinking about trying the Venev version. Any suggestions?

      I find that these Venev stones last MANY times longer than anything by Sharpal or similar company that puts only a super thin layer of diamond on top of their plates. The stone Briefly in the introduction I showed the bench-stones that Venev makes, they are 8" by 3-1/4" inches and are made exactly the same way as the stone I was restoring the surface of. Unfortunately, Venev is a Russian company and since the dumb war against Ukraine started it is much more difficult to get their products. Gritomatic is completely sold out at the moment. They have two grades of Venev bench stones, and, of course, the better ones are the most expensive but even the lower (still a hefty purchase price). They do have a Notification option where you leave your email address and they will notify you when they are back in stock. I think the cheaper version will be just fine for the home knife enthusiast, as the higher priced one is really targeting the professional knife sharpener.

    I got the 240/400. New it feels like it’s not cutting at all. Is this normal for this brand? How much time does it need to wear in before cutting as normal? Thank you.

      No, that is not normal at all. There is no break in period. I have used over 20 different stones from VENEV and they have all worked very well.
      I wonder what type of steel you are sharpening. If the steel is a budget steel then it is soft enough to fill in the low spots between the diamonds and become a smooth surface.
      Are you using the stones dry? I keep my stones very wet with soapy water, that generally keeps them from loading up with steel particles. Still, if the blades are on the softer side I occasionally need to rinse the stones off, but generally that is not necessary.

      Yeah, it's made in Russia, as I mention in every video I make about their products.
      BTW, many Russians hate what their government is doing, a bit like a lot of Americans hate what their government is doing. I don't stay away from American products just because I dislike many things the government does because I know the working Joe and Jane are hard working people trying to make good products and they deserve to have their company succeed so they can continue to have jobs.

      @@CanadianCuttingEdge I'm just being provocative. I'm fully aware that the mass media and other regime influence organs have whipped the North American and English speaking public, peasants and serfs, into a hysteria over yet another country most Americans couldn't find on a map or know the first thing about. Regardless of it's heavy dependence and geographic proximity to the US, Canada is a bit different. Of course the US has nearly an order of magnitude greater population to manage, so ofc it's going to be a different way of doing social control. I would say Canada is more a "normal" functioning society with higher levels of civic engagement and social cohesion for starters. If I was raising a family, I'd much rather do that in Canada, whereas if I was trying to get rich then the US it is. Anyway Canada a has a higher concentration of naturalized gladio era holdovers including a certain high profile character, I'm sure that has some corrosive influence added to the bitches brew.
