Yes but like you said, they were caught off guard. Vision was immediately incapacitated and Proxima kept Wanda on her toes as long as possible to keep her defensive. Those two are extremely smart and clever

In the comics, Corvus Glaive wields a glaive so sharp that it is capable of splitting atoms, cutting through virtually anything. If the blade remained unbroken, it allowed Corvus to be resurrected from the dead. I think maybe they put the same idea here, which is why he was able to pierce vision.

The most powerful doesn't guarantee the most efficient during battle. The Black Order are generals who commanded armies millions more than any other militaries from any planet to wars.
Which is why Cap, Sam and Widow are better equipped to handle them by playing their own game. Vision was lost the moment he got stabbed which cancelled his powers.
As for Wanda, she was holding back because protecting Vision was her mission. She went defensive mode instead of offensive.
The Avengers really do know their battle tactics. They know how to use it, when to use it and how much they should go for the kill given the circumstances.
