I don't understand why you left the large strand of thread at the beginning of each design. Was it personal preference? I can cut it off after I have started the design, right?

You sew your ends in when finished to stop them unravelling.

Why are there small puzzle pieces on each template which are held in place by tape?

You remove the puzzle piece to move the ruler out from under the ruler foot without having the thread get caught around it.

The rulers are great but the foot cheap plastic if you are going to charge so much for the foot then make it a metal one.

I think you are thinking of a different manufacturer. Westalee feet are definitely metal.
