    I usually bring these to about 145 and let them rest for about 10 minutes.
    By the way, I just got a new pit barrel and I love it so far.

    What's the purpose of the rebar since you cooked on grates?

      The rebar still has to be used for airflow control. It’s all part of how the pit barrel cooker is designed.
