in regards to boil time part of the video, looking at recipe builders the difference between 30 minutes and 60 minutes in regards to IBU is not a dramatic change, so i'd guess a 60 vs 90 would likely not have a large difference in IBU as it seems past 30 minutes the change is very minimal. this is one reason why i do a 30 minute bittering charge over 60 minutes
I suppose it would be easy enough to put a recipe into a program and then adjust the boil time and look at the IBUs. I think you are probably onto something though because there is an approach to only do a 30m mash (you get almost all conversion anyway) and I believe also just a 30m boil, probably for the reasons you mention. So while this beer is pretty bitter maybe it's just from the main hop addition and also the flame out hops.
It was unfortunate timing for sure. You know how it is, most of the time it's quiet. But then get out the camera to shoot some tasting notes and.... ha.
