I like the smoke on the vertical smoker just got me one. I like the tips you give on the meat you smoke. The wife was wondering if you can do a smoked salmon on your vertical smoker if you can. Thanks for the help keep it up.

Geez that slice you tried really did look perfect! What do you look for when deciding to wrap or not? You posted this just on time for a nice lesson we picked up beef ribs this morning and I’ve only done them twice but thinking of heavy basting and not wrapping.
Thanks, Frank. There are multiple reasons to wrap or not wrap but I usually wrap so they don’t get too smoky (my girlfriend doesn’t care for the strong smoke flavor). I might also decided to wrap if I want to capture the juices for a gravy or dipping sauce, and also to speed up the cooking time a little bit. If I decide not to wrap it’s because I’m not happy with the color and bark... in that case I would just continue to spritz them every 30 minutes and let just let them finish in the smoke.

Hey, that was awesome. Only issue with pellet grill i have is that the smokey flavour isnot intense enough like stick burners. I have used GMG pellets, not happy with these. Could you taste the smoke. Or it's just me.

With that said, people who haven’t cooked on a stick burner or charcoal smoker have no complaints... it’s one of those objective taste things.
