  • I love eating breakfast, especially oatmeal but some mornings I am short on time. These HEALTHY BLUEBERRY BAKED OATMEAL CUPS are the perfect grab and go breakfast. Just bake these oats on Saturday or Sunday and place them into the refrigerator. During the week, reheat these baked oats for a few seconds in the microwave or serve them at room temperature.

    HEALTHY BLUEBERRY BAKED OATMEAL CUPS
    12 cupcake liners
    1 ripe banana
    1/2 cup plain Greek yogurt
    1 cup unsweetened coconut milk
    2 Tbsp maple syrup
    3/4 cup sugar or sugar substitute (optional)
    1 tsp vanilla extract
    zest of 1 lemon
    1/2 lemon, juiced
    1 egg, beaten
    2 Tbsp unsalted butter, melted
    1 Tbsp chia seeds
    2 cups rolled oats
    1 cup oat flour, plus 1Tbsp divided
    1 tsp baking powder
    1/2 tsp ground cinnamon
    1/4 tsp salt
    1 cup blueberries
    1/3 cup almonds, sliced (optional)
    1. Preheat oven to 350°F. Line a muffin pan with cupcake liners. Set aside.
    2. In a large bowl mix banana, yogurt, coconut milk, maple syrup, sugar or substitute (optional), vanilla extract, lemon zest, lemon juice, egg, melted butter and chia seeds. Set aside and rest 5 minutes.
    3. In a separate bowl combine rolled oats, 1 cup oat flour, baking powder, cinnamon and salt.
    4. Pour and slowly stir dry ingredients into wet ingredients. Set aside. Sprinkle 1 Tbsp oat flour onto blueberries. Coat blueberries with oat flour. Add blueberries and almonds (optional) to batter. Gently fold into batter until fully combined.
    5. Evenly distribute batter into each cupcake liner. Bake in preheated oven 25 - 30 minutes or until an inserted toothpick comes out clean and oatmeal cups are lightly browned. Remove from oven and place muffin pan on a baking rack to cool, 10 minutes. Enjoy.
    This oatmeal recipe is easy to make and uses basic pantry ingredients. It is one of many ways to enjoy oatmeal. In addition to eating these oatmeal cups for breakfast, you can also bake them as a healthy morning snack. If you want to splurge, drizzle with a little honey or maple syrup before eating.
