i mean…. you can meal prep on ur days off if u can n this would probably b ready in under 30 mins, or meal prep/cook on ur day off so when u get home all u have to do is reheat
1. Pre prep the sauce (everything but the hot oil), and it will keep in the fridge for a couple of days - but don't keep it any longer, otherwise it will lose it's flavor, moisture and crunch. Cover it with some clear film. 2. Mix the chicken with marinade the day or night before. This is actually better, because the longer the marinade is on the chicken the better! (do not cover the chicken, just let it sit in the bowl in the fridge. Just make sure your fridge is below 5⁰c (41⁰F) to keep the chicken fresh. 3. Soak some rice in water for a couple of hours, or until the water goes cloudy, in order to remove the starch. drain the water, and pour the rice onto some paper towel to soak up the excess water and pat the rice gently, with towels so that the rice is not soaking wet. Then pour rice into a dry bowl and put it in the fridge without a lid. (It's important that no condensate forms) 4. Make sure you lay out all of the ingredients, spices, salt and pepper, cooking utensils, and pans, ready to use for when you get home from work. The last thing you're going to be wanting to do is start opening cabinets, and cluttering around trying to find heavy pans when you're knackered from a hard day's toil..!! When you get home from work, all you have to do is put the heat on the frypan, pour the oil in the pan, and start frying the chicken. Then all you have to do is pour the ready prepared rice in the spiced oil, re add chicken, hot oil in sauce mix, along with the sauce and you are done in 20 minutes! Job's a good'n as they say in the UK.

I just made this and it was delicious! After removing the chicken, I sauteed chopped bell peppers, onion, cilantro and garlic briefly then added in the rice, then chicken broth proportionately. Chef's kiss! It was perfection and super quick.
How does the rice taste, if i may ask? I'm not really a cook, but would like to try this. I thought if we add broth to the rice, it would taste a bit slimy(?) like it must smell like chicken? Sorry, I'm not a native, pardon for my not really good delivery 😭

I tried this recipe for my husband’s lunch. Didn’t have any chicken thighs so I used what I had which was chicken breast. It cooked PERFECTLY. Tender and throughly cooked! Rice was nice and flavorful. Oil was super good too. Thanks 😊
