You're putting that Zebco reel to work! 🤣🤣 Stamford lake in West Texas has some behemoths Buffalo and Crap. In the spring time we bowfish them. 10-15lbs all day.

Buffalo fish is the number one fresh water commercially caught fish in the world. They are great eating. So are carp. Actually the invasive Aisan Carp is supposed to be the absolute best tasting of all. But I'll take any of them. The main thing that you must do so that they taste good and not muddy is to bleed them good in water for about ten minutes or so depending on the size. You can bleed them right after killing them. Or bleed them to kill them. I do the latter because I believe that the beating heart pumps out more of the blood. I bleed mine but cutting ✂️ that thin section under their throat that seperates the gills. There is supposed to be a main artery in their and they sure do bleed out quickly. They don't seem to experience very much pain this way either. They just slowly go to sleep as they quickly bleed out. Some people hit them in the head with a wooden club or a hammer. But I've seen the fish suddenly decide to squirm and they end up hitting the poor thing two or three times before hitting the right spot. So I feel my preferred way is much more humane and doesn't cause the the same amount of stress as killing them with blunt force trauma. My way you just pull the stringer close enough to shore so that you can comfortably reach them and with a well sharpened pair of kitchen sheers cut their throats, or even their gills set them back in the water and they will quietly bleed out. Then put them on ice right away. Of course if you are fishing from a boat with a live well on board. You just keep them alive until you get home and ten minutes before you're ready to butcher them. Bleed them out.
I also let mine soak in a saltwater brine overnight. You can eat their Roe fried in a fritter as well. Just be sure to clean the sacks well and do not break their gallbladder or you will ruin the meet and whatever else it leak's on. Their heads are also fantastic eating with a surprising amount of meat on them. Also great for stocks.
