- I tried making glutinous rice hotteok(Fermented bread similar to Sweet Pancake), which can be tasted in a traditional Korean market.
Delicious hotteok, a Korean street food, fry it with fresh oil at home! (๑•᎑•๑)
Mukgling's baking method uses the No Knead method.
Using the minimum tools, seek bread making at home easily.
Anyone can make bread easily.
(B's (%) = Baker's Percentage = Bakers Percent)
(Tr (g) = actual input amount = Truth Input)
■ Stuffing : Just mix the ingredients evenly.
Tr(g): 100g White sugar
Tr(g): 100g Black sugar
Tr(g): 30g Strong Flour(Bread Flour)
Tr(g): 2g cinnamon powder
Tr(g): 20g Roasted peanuts
■ Dough Formulation
B's(%): 80.0%, Tr(g): 160.0g Strong Flour(Bread Flour)
B's(%): 20.0%, Tr(g): 40.0g Glutinous Rice Flour
B's(%): 10.0%, Tr(g): 20.0g Sugar
B's(%): 1.8%, Tr(g): 3.6g Salt
B's(%): 1.5%, Tr(g): 3.0g Instant Dry Yeast
B's(%): 5.0%, Tr(g): 10.0g cooking oil
B's(%): 75.0%, Tr(g): 150.0g Water(20℃)
■ Process | Room temperature: 23℃
1. Add water into the bowl.
2. Add instant dry yeast and distribute evenly.
3. Add sugar and dissolve.
4. Add salt and dissolve.
5. Add cooking oil and distribute evenly.
6. Add strong flour+glutinous rice flour mixture, Mix evenly until no flour is visible. (Dough temperature : 24℃)
7. After 20 minutes of rest, the first fold(folding).
8. Room temperature fermentation: 23℃, 2 hours
9. Pour the cooking oil generously into the pan, and preheat to about 170℃.
10. Put Stuffing in the dough and shaping.
(after Apply cooking oil evenly to plastic gloves, shaping.)
11. Put the dough in a preheated pan and bake it like frying.
During frying, the oil temperature should be kept at 170℃.
12. Frying time is about 8 minutes
(Time needs to be adjusted according to the amount of dough)
■ Note: Be careful because the oil temperature is very hot!
