This recipe sounds delicious. My son and husband love chicken feet. Can this be made ahead of time? I'm thinking instead of soaking the chicken feet in the sauce for 2 hours (in step 5), I can let them cool in the sauce and then put them in the refrigerator overnight. When I am ready to serve them the next day or 2, I can steam them for maybe 15 minutes.

I'm making this, or a slightly changed version of it, tonight. I messed up and forgot to put feet in ice water after frying last night. I put them in now but expect that the point was to shock the skin a bit. nonetheless, after they soak for an hour I'm going to finish them up. I don't have the wine or pixian but am hopeful some sushi wine vinegar or mirin will improvise? I do have some other chili paste I'll use for the pixian. I'm hopeful it will still turn out great. I'll let you know. I can hardly wait to dive into them tonight! Thanks for this recipe.
Actually, I love chicken foot. Learned how to cook them when I lived in Florida from some Jamaican friends I worked with at the Riverside Restaurant in Naples. Now I put them in my chicken Noodle Soup and call it Dinosaur Noodle soup lol!

My wok did not come with a bamboo lid because it was a cheap purchase, but a pot lid from another pan fits snug on top so now I can safely fry the chicken feet without frying my forearms in the process! Let's try this out and see if the wife likes it tonight!

Hi Diana, thanks for the question! You can eat them directly after simmering for 45 minutes. They are completely cooked at that point. But if you were looking for puffier chicken feet with deep flavors. You could follow the recipe by soaking them in the sauce for 2 hours. Then steam them so the skin will puff up even further.😀👍
How close is the taste of this chicken feet recipe to an actual most dim sum restaurants taste? I see u got the colouring, the saucy texture on it, the afterlook of it right. Now all Im just curious is just how the taste is compared to restaurants.

I remember always running to go eat lunch with our zambian groundskeeper, because I found the food way more interesting than my mom's. He used to cook up chicken foot stew, and it was magnificent

Optional: let marinate for two hours and steam to reheat will retain moisture.
