    I've never had this with the sesame paste, but *love* how you still kept it spicy with the homemade chilli oil!

      You have not looked hard enough. There are at least a couple of YT channels in English run by real Chinese cooks, the Happy Wok being among the best in my opinion. By the way, I really love to watch the School of Wok, too.

    One of my favorite dishes ever! If one can't find the pickled vegetable, is there a close substitute that can be used?

      You can use just about any kind of picked veg. Even kosher dills if you can't find anything else. You'll find the pickles in any Asian grocery. Look for little plastic packets that say Ya Cai...they cost almost nothing.

    Traditional Dan Dan Noodle uses thin white noodles. Egg noodle has an unique taste and texture that can take away from the Dan Dan sauce. Your version looks good, just not traditional.

    Dude do you know how to make tantanmen ramen? Its based off of dandan noodles. Tantanmen ramen is my favorite ramen when i lived in Japan.

      I don't see why you couldn't use bok choi! And yes it's is a bit similar in terms of it being a preserved vegetable, not sure about the taste profile though - Lee

      Use normal vinegar and add some sugar, it comes somewhat close to black chinese vinegar
