You have not looked hard enough. There are at least a couple of YT channels in English run by real Chinese cooks, the Happy Wok being among the best in my opinion. By the way, I really love to watch the School of Wok, too.
You always show how it's not complicated to cook good food. I appreciate your videos and I have use quite a few of your recipes and they always turn out great thanks for your time you're awesome
You can use just about any kind of picked veg. Even kosher dills if you can't find anything else. You'll find the pickles in any Asian grocery. Look for little plastic packets that say Ya Cai...they cost almost nothing.
Traditional Dan Dan Noodle uses thin white noodles. Egg noodle has an unique taste and texture that can take away from the Dan Dan sauce. Your version looks good, just not traditional.
So I tried to cook this dish and hey, it was freaking great, sure it wasn't as good as it would be from Jeremy but really this food has the kick that I need when I'm eating.
I don't see why you couldn't use bok choi! And yes it's is a bit similar in terms of it being a preserved vegetable, not sure about the taste profile though - Lee
Yours is so much different than seonkong long (forget her exact name) don’t you find the sesame too much or too overpowering? I almost just like the noodles with chilli oil
Suggestion: On your next video, try NOT to focus the camera on you too much. People are watching the "How to Cook" visual intent of the video, we are missing a lot of the preparation and cooking process. Thanks.

I've never had this with the sesame paste, but *love* how you still kept it spicy with the homemade chilli oil!
The sesame paste gives it such a nice flavour profile! - Lee
You're probably the only channel that teaches how to cook REAL Chinese food in English. Well done! Love you content and keep up the good work!
Thank you! That's fantastic to hear! - Lee

May I ask why not? Glad that you keep watching though! - Lee
If you can't find Ya Cai, to my opinion Miso it's a good substitute.
Sounds like it would be really good! - Lee

Thank you! - Lee
I'm glad you didn't do the music throughout the whole vid. People will keep watching, even without music. We're here for the food.
That was our thought process behind it! - Lee
One of my favorite dishes ever! If one can't find the pickled vegetable, is there a close substitute that can be used?
You can use just about any kind of picked veg. Even kosher dills if you can't find anything else. You'll find the pickles in any Asian grocery. Look for little plastic packets that say Ya Cai...they cost almost nothing.
You guys all doing my job for me, love it! - Lee

I sure will, Lee
Thanks
Mimi
I thought Dan Dan noodles had Sichuan pepper in them??
You can add some Sichuan peppercorns if you like! - Lee
I agree. It's not dan dan noodles without the Sichuan peppercorns! I hope you never make mapo tofu without the Sichuan.
Where is the Szechuan peppercorn?
Your an awesome cook Sir and because my name is Dan, this is for me but it may be a bit cold by the time it gets to the states. 😃
We ate all of it, looks like you'll have to make your own - Lee
Well if that's how your gonna be, I guess I'll make my own. 🥄🔪 👍
Congrats on this fantastic rendition of Dan Dan Noodles. Looks excellent, I just ordered my Ya Cai and can't wait to re-create this.
Thanks! Let us know how it turns out! - Lee
Eating it right now, love it! So quick and easy to make!
@@meathead919 Glad to hear it came out nicely! - Lee
If we can only get tahini, why can't we use it rather than peanut (sauce?)?
Kicked food Video 👍👍
I'm not sure what this means but I'm going to assume it's a compliment, so thanks! - Lee
can I substitute sesame paste with tahini?
You could do, it's very similar! - Lee
Traditional Dan Dan Noodle uses thin white noodles. Egg noodle has an unique taste and texture that can take away from the Dan Dan sauce. Your version looks good, just not traditional.
Awesome video! Looks amazing! Can you make a Mongolian Beef video/recipe please?!
Thanks! I'll note down your suggestion! - Lee
Jeremy, Jeremy. This food looks delicious and I bet it tastes delicious as well, gonna cook it and write down how it went. Thanks for super recipe!
Do let us know, we love hearing how it turns out when you guys cook up our recipes! - Lee
So I tried to cook this dish and hey, it was freaking great, sure it wasn't as good as it would be from Jeremy but really this food has the kick that I need when I'm eating.
Perhaps he could check is measurements. 2 TBLS is 30 ml -- are we to beleive him?
Love your video's. Keep it up 👍
Thank you! - Lee
Can I use beef or chicken instead of pork in this dish?
Absolutely! - Chris
UnbeLeevable
Haha, I know right - Lee
Hey Jeremy I had some beef that needed slow cooking and I was wondering what you would do with with a piece of braising steak or ox cheek
I'll ask him and get back to you when I can! - Lee
Looks delicious; no "tummy and the head"?!?
We have failed you - Lee
No Sichuan peppercorn ?
Hey guys
What are your preferred brands for the staples like soy sauce, rice wine, vinegars, pickles etc
Lee Kum Kee is the safest choice I guess.
That's what we use! - Lee
School of Wok for all?
@@Bladesmobile Yep, except pickles. I'm not sure what we use for that! - Lee
School of Wok didn't realise they did all this. Just seen the sauce jars
Dude do you know how to make tantanmen ramen? Its based off of dandan noodles. Tantanmen ramen is my favorite ramen when i lived in Japan.
I'll add it to our suggestions! - Lee
That's nowhere enough chilli oil, mate. :)
Ya cay is similar to zha cay? And can I use bok choi?( i can find in italy)thanks
I don't see why you couldn't use bok choi! And yes it's is a bit similar in terms of it being a preserved vegetable, not sure about the taste profile though - Lee
Thanks!👌
Can you make Peanut butter chicken?
We have a chicken satay video! ua-cam.com/video/1_0Tty4dgZU/v-deo.html - Lee
If it's just like tahini why wouldn't you use that if you can't get the Chinese sesame paste?
You can use it if you can't get any, but we can get it! - Lee
I'm really liking these videos so much that I've subscribed! Here's a recipe suggestion in the future, how about Fujian Fried Rice? :)
Thanks! I'll note down your suggestion! - Lee
Hey bro, love it, live it, cook it. I must visit your school on a transatlantic trip. At least for one session.
You won't be disappointed! - Lee
Duck!!
Where? - Lee
Haha, you have to show us how to make it.@@SchoolofWok
We're filming a duck recipe on Tuesday, stay tuned for that video! - Lee
Yours is so much different than seonkong long (forget her exact name)
don’t you find the sesame too much or too overpowering? I almost just like the noodles with chilli oil
No Sichuan peppercorns?
I think that flavor kinda takes over everything. Nothing wrong with leaving it off if you're not in the mood.
Feel free to add some in, but I wouldn't go over board! - Lee
Hello
Hi - Lee
I was really upset you didn’t say high heat again
High heat. Did that help? - Lee
It’s the way you say it mate, It’s great. I love this channel, been waiting for something like this for ages. Learning a lot
This is the dan dan noodle equivalent of boiled pizza. Why is this even on UA-cam?
Audio and editing in this video was very odd.
How so? - Lee
What can you use if you can’t find black vinegar??
Use normal vinegar and add some sugar, it comes somewhat close to black chinese vinegar
👍- Lee
Thanks, I’ll def try that

Random question: are you English? You sound like you have an accent
Now...how to make this ya cai?? Cant find that shit anywhere..
You could use jarred pickles if you can find any ya cai - Lee
Too noisy
Kein Gasbrenner!!!! Kein autentisches kochen!!!
Cannot buy half of this shit online (Amazon). Useless.
need to work on your sound- too much echo
We'll work on it! - Lee
