I’ve since switch from an electric smoker to a Traeger. Smoking in the cold is very dependent on what type of smoker and it’s insulation level. You have to make sure you go from 40 to 140 degrees in under 4 hours. Although I no longer wrap my shoulders I probably would in extreme cold to get through the stall maybe wrap around 160 and cook to 203. If I’m in no hurry I smoke at 225. If it’s cold out or I want it done quicker 250 to 275

I live in Ohio and it’s pretty damn cold right now. How did the bone come out of that pork butt?
It pulled out clean. But it took way to long to cook.
