The stairs thing is pretty common in almost any gamemode, Bedwars, Skywars, you name it. The blocks thing is actually impressive, he has a really good CPS for that.
Any decent player could do that. I stopped playing mc 1 year ago and I could do it. Its called hcf

my guess is he turboed his mouse buttons to 20 clicks per second and that's why he was able to do all those manouvers

Btw the apprentice bow resets on the damage that you dealt when you shoot the 1st time, if you have a power 3 or 4 got from someone else you might just want to do /ccn so it doesn't reset
