I like the idea of chicken stock (instead of veal or lamb stock). I will be using this recipe for Easter for sure! I've also seen people sear the lamb before putting it in the oven. I might try that.

You need to change your dishwashing liquid. Some are quite weak, some are stronger. For plastic and non-stick surfaces, you need dishwashing liquid that cuts through grease well.
I usually rub a little neat dishwashing liquid over the silpat sheet using some paper towel. Leave it a few minutes then rinse off with hot water and then wash as normal. Always works for me.
I don’t use silpat, but based off of what I think I know scientifically, most of the stuff on the silpat is probably grease and natural sugar. So if you soak it then it might actually loosen things up a lot and make it easier for you to use a sponge and some dish soap with warm water.

Roast lamb should be pink in the middle. That is a very nice lamb dish. One of my (late) aunts and uncles had a sheep farm in Alberta, Canada. My (late) maternal grandmother made roast lamb once. It was very tasty. I've loved lamb ever since. Cheers, Bruno! 👍👍✌️
