    I like the idea of chicken stock (instead of veal or lamb stock). I will be using this recipe for Easter for sure! I've also seen people sear the lamb before putting it in the oven. I might try that.

      Useless to sear the lamb before being roasted. Searing is good for the Seven-Hour Cooking Leg of Lamb... a different concept. The 7-hrs lamb (gigot de 7h à la cuillère) will be featured here soon: academy.brunoalbouze.com 😋

    Quick question---how do you clean the Silpat? For me, it's so hard to clean even just a little bit of grease off it. Any tips? By the way, I love lamb and this looks amazing!!! Will probably try this for Easter. Thanks!

      You need to change your dishwashing liquid. Some are quite weak, some are stronger. For plastic and non-stick surfaces, you need dishwashing liquid that cuts through grease well.

      I usually rub a little neat dishwashing liquid over the silpat sheet using some paper towel. Leave it a few minutes then rinse off with hot water and then wash as normal. Always works for me.

      I don’t use silpat, but based off of what I think I know scientifically, most of the stuff on the silpat is probably grease and natural sugar. So if you soak it then it might actually loosen things up a lot and make it easier for you to use a sponge and some dish soap with warm water.

      I've been subscribed since way back when he only had a few subscribers, and it was always stunning quality and very professional. I couldn't understand why it didn't have more success, it got there, but it took years.

    Roast lamb should be pink in the middle. That is a very nice lamb dish. One of my (late) aunts and uncles had a sheep farm in Alberta, Canada. My (late) maternal grandmother made roast lamb once. It was very tasty. I've loved lamb ever since. Cheers, Bruno! 👍👍✌️
