- Hey everyone! It's that magical time in Northern Europe when daylight stretches well into the night, creating the feeling of endless summer days. While it might seem like the perfect time to take it easy and enjoy the season, I feel so alive and energized by the long days that I want to do as much as possible. This vlog is all about enjoying summer to the fullest!

🪴Rhubarb Syrup
Ingredients:
1 kg rhubarb
200-400 grams sugar
Water (enough to slightly cover the rhubarb)
Instructions:
Wash and chop rhubarb into pieces, then weigh it to determine the amount of sugar needed. Add rhubarb to a pot and cover with water. Leave to infuse overnight. Bring mixture to a boil and let it boil for 10-15 minutes. Strain the mixture, pressing out as much juice as possible. Add sugar and simmer until dissolved. Wash and sterilize jars and lids. Pour syrup into sterilized jars, seal, and store.
🪴Focaccia Bread
Ingredients:
3.5 dl water
25 grams of fresh yeast
7 dl wheat flour
1 teaspoon sea salt
0.5 dl extra virgin olive oil (plus extra for drizzling)
Optional toppings: rosemary, olives, cherry tomatoes, etc.
Instructions:
Dissolve yeast in warm water. Add 2 dl flour, mix, then add salt and mix again. Gradually add the remaining flour, then olive oil and mix until dough forms. Knead for 5-10 minutes; the dough will be quite sticky, and that's okay. Let rise until doubled (1-2 hours). Preheat the oven to 220°C. Oil an oven dish and transfer the dough, spreading it to fit. Press fingertips into dough to create dimples. Drizzle with olive oil and add toppings. Let the dough rise in oven dish for additional 30 minutes. Bake for 20-25 minutes until golden brown. Let it cool slightly before serving.

I love how you make things. I do too. This week I made elderflower mead with local honey. The elderflowers are in bloom here in Ireland. I also made mushroom ketchup.
Did you know that if you roast rhubarb it gives it a much deeper flavor? You could add the sugar and water afterwards.
I'll be making lemon balm tincture next. I'll dry some for the winter as well as lemon verbena which is my favorite herb. Along with rosemary which I also tincture and take daily. Made several different flower essences this month too.

What a lovely video 🥰. Your childhood room is so cosy and sweet, and what a good idea to have the windows opening inwards! It makes cleaning them so easy. I wish we had them in England but I’ve never seen them here in any of the houses I’ve lived in. I bet your kitchen smelled gorgeous when you were cooking the rhubarb 😋 and what a beautiful colour 🩷
Thanks! 😍 It is much easier, yes! The color came out so beautifully pink, I'm glad I didn't peel them. They were all organic, straight from my mother's friend's garden.😊

I love rhubarb and you are lucky to have such an amount of it! 😍 We have either rhubarb in our garden, but I guess it needs some special treatments, as it is unfortunately a litlle bit smaller every year :( but maybe it is because of his age, as my grandma planted it long long time ago 😊 Maybe you should try Vileda PVA micro window cloth - I use it only with water and it cleans windows as good as chemicals substances, there are no smudges and I believe that this is at least a little bit healthier not to breath a chemicals spray 😊
I love rhubarb so much! For washing windows, I actually use just basic dishwasher soap and water. I did use some kind of basic spray for the mirror that I found in the kitchen cabinet. But I totally agree with you about avoiding toxic household chemicals. Often, I just use basic soap, water, and vinegar. Rarely do I use something stronger. Thank you for the tip, I have to check it out! 😊

Thank you! ❤️ I'm actually not a big fan of refined sugar either (that's why I made some with the sugar alcohol xylitol). But rhubarb is very sour without it😅. The syrup also needs to be diluted with plenty of water, which reduces the overall sugar content in the final drink. I use it as an occasional summer mocktail ingredient.
@@idyllineverydaylife Try allulose as a great sugar substitute. Not sure if it's available everywhere, but it is not only almost as sweet as sugar, it is showing to be very beneficial to one's health. It's almost too good to be true!

Not at all! Finland and Estonia (neighboring countries) have all four seasons. Summers are usually nice and mild, but Finland is such a big country that in the far north, it can feel like winter for much of the year. 🙂
