Coconut oil will completely change the flavour profile. Vegetable (sunflower oil) has a more neutral flavour profile and the end product will also be lighter. And if you are in love with Mustard oil then nothing else matters 😄
Amazing! The recipe that man at store suggested is Southern style probably Kerala style of cooking Pakoda. In North India, Pakora is a Vegan dish, we don't use Eggs in it and also we generally use Soybean refined oil or MustardOil(preferred as its better for health) for frying.
Pakoda mix with brinjal cauliflower onion gramflour deep fried in oil is very tasty and this is eaten in morning /evening time with coriander chutney/tomato sauce and tea . It is common snack in india, Jessica.

Hey dear.. Next time whenever you deal with dry Indian spices (especially whole) do try this.... Dry roast them in a pan just for 30secs. Spices should not be burn bcz it contains natural oils which can be easily burn.. When we dry roast whole spices then their natural oils come out... After dry roasting crush them a little but not in grinder but in pestal. (if u don't have pestal then use a steel glass and for mortar use chapati roller (in India its called belan).. After grinding a bit then use spices... U will see the difference by urself....

Those nuts are pumkin seeds or watermelon seeds. Normally we throw it away when we directly eat those two fruit/vegetables. But if you collect them, roast it and peel the skin of those seeds it looks like that. Pumkin seeds are greenish outside after peeling, were as watermelon seeds look white. It has many healthy nutrients and also delicious in taste. Good timepass thing too. Many Indian deserts use them as well.

Instead of mixing all vegetables make pakoras of each vegetable alone each one tastes different, just slice down the vegetables the slice thickness depends on how fast the vegetables get cooked, more thin the slice more crunchier the pakoras. you can make pakoras of every vegetable like onion, potato, cauliflower, brinjal, coriander, chilli, spinaches, paneer, banana, etc. Recipe for Chilli pakoras is little different, To make chilli pakoras just put cut to chilli from stem to tail remove some seeds if chilli is much spicy, rub some salt inside chilli from the cut then if you want you can fill smashed potato in it it's optional then deep it in batter then deep fry it. Be careful chilli pakoras are more spicy. You can also make currys with adding pakoras in it one of the traditional vegetable from middle India.

Be careful with ajwain, taking more of it will lead to dehydration (Any excess spice is not recommended). Normally pakodas are made with onion or spinach but u can also add tomato, brinjal any other vegetable, egg, meat, etc.., only that u need to like the taste or u are able to eat.
Use all spices of M.D.H in Indian dishes same one of the the chaat masala brand that's a best brand in India too almost all Indian's prefer to use M.D.H brand because of quality and taste got it

Cilantro and coriander leaves are the same.
When you use chilli powder go for Kashmiri chilli, it gives more color and is less spicey.
