There's a similar technique in clothes sewing called "Hong Kong finished". And "French Seam" is another completely technique. And another similar one is"Flat Felled Seam".
Going in to leatherwork after several years of sewing was such a fun experience, it's not like going blind. I did transfer several sewing method in leatherwork and it's worked out great, would recommend checking out those techniques.

I have seen this in shoes, I own a pair. But I'm afraid you'd need to ask a shoemaker to get the best answer.

I know this is an old video.. but how would you go about wrapping it around and doing the same seam on the other side? Seems like it would be tough to get the tension correct

You wouldn't. You will need two separate French bindings that overlap in the middle with a separate seam of it's own.
