I mean Arkham Origins did add new things like the bosses you mentioned, and the martial artists. It's just a thing when creating sequel on games. But anyway,very good list and I agree on Deathstroke being the best.
Even thou Deathstroke was my fav, I just wish it was harder. I’ve never come close to dying and while the countering is intense, I wish it made me work for it, at least on the harder difficulties

There is also the Shiva boss fight in the Initiation DLC and, if he counts, the Electrocutioner. You also mentioned Bird boss fight but didn't rank him.
