Oh great! Dates will definitely work. You could substitute the raisins with dates or just add an extra couple in for more sweetness. I’ve been using a date syrup a lot lately in place of maple syrup too. Let me know how you like them!

It is an organic blackstrap molasses so I don’t find the taste too harsh. I don’t know if a regular blackstrap is a little more harsh tasting but I’m sure it would be fine. Light molasses will work too though and might just be a bit more mild in flavour.
Absolutely that’s a great idea! Some people find cocoa powder a little bitter but I roll another energy ball I have (a spicy beet truffle) in cocoa powder and everyone has liked it. You could always add a tiny bit of coconut sugar or something similar into the rolling mix too.
