I was surprised that they don't really lose any flavor by freezing. I just did a test batch and put them in some tomato sauce. It was delicious!

I'm happy to see that the method you've shared to freeze the leaves didn't turn black. I also love the fact that you didn't cook them before storing or making them into ice cubes to store them. Suggestion...add small amount of olive oil to basil before freezing. Will prevent freezer burn.

The grocery store in my town had the small package of basil on sale (the organic kinds) for 25 cents and the big package for a dollar !!! I couldn't believe it. So I bought few of them and now looking up ways to freeze them. Thanks !!!

Hi, So you just let them air dry after washing and then stack, roll and freeze? Like how 'dry' should they be? Meaning, they're just airdried and rolled while still soft?
Hi Cindy! The basil shouldn't be desiccated. It should be frozen while it's still soft.

Many people stress too much with preserving basil. It doesn't matter whether you wash them or preserve with olive oil, it still taste and smell well after months of preserving it. Just don't leave it out for long when you take it out for use and it should be in an air stripped container.

It won't look fresh like it does after harvest. There will be some condensation from thawing. It will still taste great though!
Do they turn black?. What about adding olive oil, will it preserve better. Can you separate the Leaves one from each other.
They shouldn't turn black if they are just dried enough to be soft, and then stacked and rolled tightly before freezing. Freezing individual, loose leaves has more chance of turning black. Olive oil can help, too, but it's possible to do it without oil.
