From cost and maintenance point of view, exhaust fan is the right choice, particularly if the kitchen has windows and doors also making good flow of air.

If you have a huge window in front of the hob just like most Indian kitchens then a good exhaust fan placed on the window itself would be much better than the "noisy" chimneys.
One thing you must do though is have a protruding shelf(glass/plywood) just above the window so that the oil and grease sticks to it on its way out which can be easily wiped.

I have both... Dono ke apne fayde hai, india me summer me bht andhi toofan atey hai jinke sath bht dust bhi chalti hai us waqt chimney bht kaam ati hai.. Waise personally mujhe chimney zyada pasand.

With only exhaust fan, oil and grease gets stuck with blades of fan, which makes it very difficult to clean, as normally one needs to call a technician to take out the exhaust fan blades, clean with soap water, dry it out and then again fix it. In order to avoid all these difficulties, I would advice to put a plastic net (the same used on windows to stop mosquitos coming ) before the exhaust fan, so that instead of sticky oil and grease sticking to the blades it will get stuck on plastic net. As the plastic net is not costly, it can be easily replaced and even need not be washed and cleaned.

Nikanj ji, there is a topic which I think you have not covered. Interiors can be done in various ways, by carpenters doing entire work at home, or fabrication at factories and only erecting members at site. Also, is MDF preferred and where. As a civil engineer, faced this issue for my new apartment and learnt a lot on this.

Noise level is another important factor that needs consideration. Some brands/models have low noise levels at high suction capacity. I have seen people installing chimney, but not using it because of noise. That beats the purpose of it.

You forgot one very important benefit of chimney. The high end chimney comes with charcoal filter which filters the air inside the kitchen. The exhaust fan throws all cold air in summer out of kitchen. So air conditioning becomes useless. But the chimney doesn't throw out the bad air but keeps cleaning internal air inside the kitchen. The charcoal filter has to be changed evey six months depending on the usage.

Chimney helps in fast suction of fumes and exhaust takes time and the fumes get spread all over the kitchen. Window band rakh kar chimney use karna chahiye.
