I assume I can use the same splitter to send my Kscape signal to my theater in the Kitchen? Just a long fiber HDMI with one going to Trinnov and one to kitchen?

Yeah, the splitter would work with anything. I'm actually thinking about getting another one for my K instead of using the AVM 90 zone 2.

I do have 2 Strato C’s . But I refuse to buy another one at that price, I’ll never understand how they justify that.

how do I change audio to pcm on my apple tv 4k instead of auto dolby atmos also have a pair of home pods?

You should be able to just leave the ATV audio on auto, and you'll get Atmos if the signal is Atmos or PCM otherwise automatically.
