Page break is used to manually break a page instead of word automatically created a page break after each page.
Section break is used to create different sections of your document.

If i want page numbers like "page 1 of 5"? I have 5 pages, I excluded the page 1 because it's the cover, page 1 started at page 2, it must be page 1 of 4? It's still 5...Who can answer?

I totally understand your question.
If your document has 5 pages and you want cover page without a page number. So your next page will start from page 1 and then 2,3 and 4.
