    Bacteria can survive freezing. But freezing kills worms, so that helps. Freezing is also used to kill worms in fish that are eaten raw, like salmon sashimi

      The crabs are frozen alive. The bacteria spread when a crab is killed. The bacteria aren’t able to spread through the body when frozen, and most of the bacteria cannot survive once thawed. This is perfectly safe.

      @@AZEOforreal it's possible for bacteria to survive freezing. That's how bacteria are stored long-term in the laboratory, albeit in a more optimized medium. But yes, it's possible for bacteria to go into stasis while frozen, and survive after thawing.
      That said, you're correct in that if the bacteria count was low at the time of freezing, it's not going to bloom to dangerous levels within a few hours after thawing, especially when you're adding in that marinade. So just make sure whatever seafood you buy is properly processed for raw consumption and it should be fine.
      But mostly I was just saying that freezing will absolutely kill off parasitic worms, which is also important.

      @@AZEOforreal bacteria deffinetly can spread when frozen depending on the type and temperature it is kept at which is why some foods only have a short best before date while still being frozen, and the bacteria does survive being thawed when not defrosted in like a microwave, because a microwave basically cooks them

    Wendy, it’s the parasites and they don’t always die when frozen some go into sleep and cooking to temp finishes them off. Avoiding cheap seafood will minimize this risk but again it’s all up to the consumer.

      Flash freezing it, -4 degrees Fahrenheit, should do the trick I think. Most fridges don’t go that low tho.

    Freezing it doesn’t kill a lot of the bacteria or viruses on the food. It may help with some parasites but that’s it. I’d recommend blanching the seafood to kill the outer microbes but you’ll still be risking the inside stuff. Try to pick high quality farmed seafood to avoid the most harmful microbes.

      freezing it does kill it but it has to be flash frozen (-4 degrees fahrenheit) and normal fridges usually don’t go that low.

    Nah fresh crabs is a must for me. It'll not taste fishy and will last longer. But if it's off season then I guess frozen is fine, just make sure you're getting your crabs from a good place because ya can't really trust eating raw frozen food.

      Here’s a well written explanation from Reddit for you: “The FDA requires MOST fish species to be frozen in a home freezer environment for 7 days, blast freezer environment for a couple of days, or nitrogen/ammonia freezer for 24 hours to kill parasites that may be living in the fish prior to raw consumption. This means that frozen fish in the grocery store is actually safe to use for sushi.”
      Fresh seafood that is labeled sushi grade (an identifier used to mean the seafood went through a freezing process to kill parasites) or labeled safe for raw consumption is ok to eat raw from a fish market and will have gone through one of the forms of freezing to kill the parasites. Still fresher than frozen from a grocery store market if that’s what you want. And just as safe. People in the business recommend buying a whole fish and filleting it yourself instead of buying cuts even if those cuts are labeled safe tho. Either way I was not saying you can’t eat them frozen from market. I was clearly answering a question from the video…

    It really depends on where you live. Blue crab (which is usually what is used for this) is best caught and eaten in early fall. That way they’ve had time to mature. So if you live next to the coast where you can get them super fresh, fresh crab is yum! Outside of crab season and farther away from the coast, frozen crab is safer.

      It's a traditional food in Korea. It's just a cultural thing. They eat a lot of raw seafood that typically wouldn't be considered safe in the west.

      @@Platymapuss I think the original poster meant is FROZEN crab safe. So like when you get seafood sushi/sashimi grade it’s pretty dang fresh to my understanding. Frozen seafood is not necessarily fresh tho. And it not being fresh is the dangerous part, not so much them eating it raw. I will say since she kind of pickles it in the marination it’s probably SAFER then just eating the crab outta the frozen package.

      @radish ok yup that’s what I thought. Like if I walk into my local supermarket, and I pick out a bag of raw shrimp I’m not about to defrost it and eat as is. Because I can’t guarantee how fast it was frozen or the temperature it was frozen at. So that’s what I assumed the original poster was asking when they asked if she got a specific grade 🤗 (but I do not buy such high quality seafood so thank you for explaining cause I wasn’t sure 😂)

      No it is not girl.... I am Korean and transporting fresh crab without freezing is dangerous so they are usually fast frozen fight after getting caught. At least that is how they are done in korea for past 20 years in my life😊

      If you’re eating it raw it needs to have been frozen- it’s nothing to do with the freshness but because fish/crustaceans can have parasites in them- cooking would kill them, but if you’re eating it raw they’ll be in there and could cause you harm- so freezing the fish takes it to a temp where any parasites die and you’re good to go

      Actually eating sushi or raw fish is a bit different to raw crab. Raw crab comes with its own set of food poisoning risks which may be worse than sushi.

      ​@EchoKamelot I hate raw fish and seaweed so sushi is a massive no for me 😅. The only time I got something I liked was when a sushi chef put roasted salmon and garlic with soy sauce drizzle on top of rice in a sushi shape and it was BOMB.

    Wait I think it’s supposed to be the opposite, I think you’re not meant to eat raw meats after they’ve been frozen (and thawing) because that actually enables bacteria to grow, you’re supposed to eat it fresh if you want it raw

      The FDA actually recommends freezing seafood that will be eaten raw. Freezing kills parasites. As long as you follow proper procedure when thawing, your risk of getting sick is lower when eating previously frozen seafood.

    I don’t think freezing it would kill all the bacteria, well it’s depending. Some bacteria can live at a very low temperature that requires heat to kill while some can be killed through freezing cold temperature. Moreover, in my culture we use raw crabs to marinate, it serves as great side dish! Yours looks tempting for me 😅

      It has to be frozen in a special freezer I'm assuming, sushi freezers are -40°C which kills bacteria.
