    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992.       it will never. because the taste of the meat and the texture of the marbling will never get close to the real thing. Basically is just a good visual presentation to make a few more bucks on a cheap cut.

      Short rib is nothing like a wagyu tenderloin. Short rib is amazing but it has a significant amount of connective tissue that needs to be broken down more than a tenderloin whether it is wagyu or not.

      He removed the connective tissue.The only thing he cooked was marbled beef with no bone, no connective tissue, no fat cap. Just marbled beef. It came from a good old US steer and looks good to me.

      short rib has a distinctive taste. where as wagyu can be any cut you want. you can even get a short rib wagyu.

    You were lucky, some Short Ribs develop great marbling but it will be hard to find consistency like that all year round. If they are sliced thin just like you did there is no question they will eat very well but they are never going to delivered the flavor and exquisite eating experience that a true Japanese Wagyu Steak. Great video!!

      @@lhill4363 maybe, but to screen for that marbling would be pretty difficult. Picking out ribs 6-8 specifically is not easy and you won't get a consistent supply

    I just recently discovered wagyu through Guga. Even then, I thought that I would never experience the taste of such a delicacy without hitting the Lotto. NOW, the good 'ole U.S. has leveled the taste field!

    Just had it side by side with a5 wagyu ribeye. It does not compare. at all. Both great. but im sorry its not at that level and i have no issue paying (literally) 10 times more for wagyu.

    Yeah - this is not big news, that short ribs are pretty amazing. However this isn't like Wagyu and especially not as Kobe!!!
    However there is a hack on the hack. Just cook the short rib sous vide at 57ºC for 72 hours - and it is as wagyu (melt in the mouth) - maybe even better.
    I would also rather add a bit of mustard seeds, pepper, dried garlic. Long cooked robust cuts like ribs can become a bit "funky" when cooked for very long (at very low temp).

    Here goes nothing, my whole foods butcher just cut 8 flanken style ribs, 1-1/2 thick. I paid $8.99 lb.. But different results in the marbling, not even close to what Hero had...😣

    I like short ribs cooked with bone on for extra flavor but cut little slits near the bone so you can pull pieces apart easily. You just broil them for 5 minutes per side or so. You can marinate beforehand if you want.

    That is gangsta and breaking all the indoor grilling rules lol. How you grilling on a butane stove and using the open flame? Like how dare you lol. And the nerve of it to actually work for you and not blow up.
    And I'm gone need the chef to learn how to cook all as if he is cooking for himself when cooking for a partner lol. Second time watching a wagyu grilling video with you two and im just saying what I see that the camera guys one always be cooked longer and he have to vocally call it. The chef would just let it go and go and didn't put salt or rice so he can have a real bite. Idk about that one but he can tell a lot about a "partner" on how they feed you. Mmmm mmm lol. Get it together chef. Dont get lazy on other people's bite. 😂 if you ain't gone do it like you know it needs to be done then make yours and tell him to make his own. Get it together nah.

    Maybe I been taught wrong but I always thought you suppose to clean the meat when it's fresh out those nasty packages!? Not trolling but I notice a lot of UA-cam chiefs have the cooking part down but appear to be very unsanitary and oblivious to contamination.

    Shortrib is like $20+ a pound here in California, I wish it was this cheap, is eat it all the time. Grocery stores don't even carry it in my city usually.

      Yes and it's nothing at all like real wagyu lol. You could eat real wagyu raw and it will just melt. The difference is the amount of connective tissue in this heavily worked muscle versus a tenderloin.

    Sometimes at the Butcher Shop I find steaks with similar marbling. I try not to sound too excited and go "whoa, amazing marbling" I usually say "I'll take a couple of those"
    I imagine them cutting the meat thin really helps it stay tender here too.
