Not an expert, but while doing some embroidery on paper found 2 things that work for me. 1. Poke holes from the front, then it's a bit like those old wooden lacing boards. 2. Put some clear packing tape on the back. It'll make your needle sticky, but that's a small price to pay v the perforation problem. Love watching what flows from your brush.

tip; use bookbinding cloth tape at the back; does not gum up the needle and prevents rips; plus it's archival!

This looks lovely. Only advice I'd add regarding the embroidery: sometimes it can be useful to separate the strands of the embroidery thread and use fewer of them - like two or three. That way the holes don't need to be as big because the needle can be thinner and the end of the needle will be less thick going through the paper as well.
It may be more work, since it takes longer to cover a given area, but the stitches can put be a little closer to each other as well, and, provided the right backing (or solid enough paper/cardstock) it should be stable enough and give it a more even look.
(Also, thinner threads and closer stitches are a good basis for putting in more detail.)
All that being said - I came her to look at something pretty, and I was not disappointed. This was a lovely watch, and your narration was enjoyable as well. Thank you for sharing this with the world!

Soooo cool! There are a lot of different stabilizers that can help with structural integrity (though there’s still the issue of too much perforation making things look a bit overworked. Another option is to make digital images of your painted work and getting them printed on fabric using Spoonflower, which you can then embellish without fear!
Also, your ability to preserve highlights without masking is badass!

Aw damn, I have no idea. It might be just a student quality store brand (Opus) watercolour paper, but I was trying out a lot of different Legion papers over time, and the only sample I didn't label was Bockingford, so that could be a possibility too. :/
