For those who find the cost of candied ginger outrageous (me!), fresh ginger is sold in many produce sections. It's so easy to make at home, plus you can use any left over sugar syrup to sweeten tea or in baking. I love its sweet, fiery, peppery flavor and....it doubles as an effective sinus decongestant too!
That looked so good in the pan, and even better out of it! I can just picture your family banging their forks on the table chanting "Is it not ready yet.... please bring it soon" lol., as I'm certain your house smelled AMAZING! My fam would probably do similar lol. The smaller individual size would be perfect on a holiday dessert table, a perfect couple bite size, and easily handled too. Love the addition of the crystallized ginger both in and on the cake. I don't do as much big scale baking as I used to (lousy ROM in arms) but might give it a go in the smaller tabletop oven with time and temp adjustments as necessary. Wish me luck. LOL. To make the gingerbread moister, poke holes in hot loaf and pour some of the icing on. Allow it to cool then add the rest of your icing. This way, the icing soaks in and makes the center much more moist. Even better is to make a rum sauce and put it on the hot cake/loaf, then allow to cool before you put icing on ☺

I've heard if you grease the container before putting treacle /syrup into a container or bowl it just slides out , fab video i love gingerbread beautiful.reminds me if my mum in law she was wonderful fantastic baker .

I'm stateside, too. Check in your area for an International market or a specialty market. I found one in my area that carries lots of items from the UK, besides it's fun to just try some things. But, molasses or sorghum... still soo good. That's what my mom and Grans used.

I have not eaten Ginger Bread since childhood, that's a long time ago. But I am sorry Cheryl this time you have failed. I am still terrified by the process of trying to make this. Good thing is that cinnamon is supposed to be good for diabetese so it will cancel out all that sugar (some hope).
At last! A proper recipe using black treacle and enough ginger. Well done!
