    Injera is basically made from Teff grain. Very tiny grain. Out of Ethiopia, Teff is also produced in South Africa. Ethiopian in USA ordered teff grain or flour from South Africa. I mean South African farmers become huge producers of teff( ethiopian origin grain)

    Just curious, when you say “authentic” is that based on you having eaten the food in the country of the cuisine and you’re comparing the 2, or is it sometimes that you assume it is authentic? I think you mentioned you have been to Ethiopia but have you eaten the same type of food in all countries you suggest the food is authentic in other restaurants? I’m not suggesting you’re wrong, I just think we should understand while watching.

      Good question. Yes and No. Some food I have,some I don't. When I say " authentic " I mean I am eating at a Chinese restaurant with Chinese cooks. If I go to an Indian restaurant for instance,if the owner is from India and the chefs cooking the food is from India,does that not make it authentic? I think it does. The reason my Jamaica Me Crazy review was bad is because there is nothing authentic about it. South Africans and Zimbabwean people cooking food from a country they know nothing of,same goes for the owners. This restaurant is owned by Ethiopians,most times if it has a country name in it,automatically it should be authentic. If a restaurant says Japenese and there is no Japenese chefs they taking the piss. I was a chef for over 10 years,I spent majority of my life in kitchens with incredible chefs as my mentors,i don't want to make it a " chef " show but I studied Culinary Arts and earned my stripes in kitchens,do I know it all,No i don't. Do I know food,to an extent yes,I can tell if you cooked it or microwaved it based on taste.
