- Remember 10 years ago when everyone, and we mean EVERYONE was on a Rainbow anything craze?! Well, we're giving a nod to our infamous Rainbow Cupcake video but we've made it even better. A new and improved sponge and a clever way of incorporating all of those colours into the icing.

SPONGE
240g Self Raising Flour (this is the correct amount, not what I say in the video 🤦🏻♀️)
1⁄8 tsp Bicarb
3⁄4 tsp Sea Salt
200g Caster Sugar
110g Vegetable Oil
145g Milk
2 Eggs
1 tsp Vanilla
Rainbow Food Colours
BUTTERCREAM
285g Soft Butter
1⁄4 tsp Sea Salt
450g Icing Sugar
1⁄2 tsp Vanilla
1.5 to 2 tbsp Milk Rainbow Food Colours

When I was a little girl back in the 1950s, my mother used to make my brother and me multi-colored birthday cakes. All my friends were amazed and envious! We only had 4 colors then (they didn't blend well to make secondary colors), and they weren't as vivid as modern food coloring, but we loved them. I would totally make these!
Even in the early 90s, my Aunt used to make “rainbow” cakes for me though we didn’t call them that then. When I brought them to school, everyone thought they were amazing.

Thank you for the Amazing recipe. My daughter has a birthday soon and after a long search for the best n siimple recipe, i’ve decided this are the cupcakes i’ll be baking for her to take to kindergarten. My only question is,how much baking powder for the same amount of all purpose flour?
Recipe says 240g of SRF but you say 275g in the video!

Did you stop butter based cupcake base all together and started to make swap for more of this veg oil based?
Nope, but this batter lends itself really well to the colours and keeps quite separate after baking. The butter based ones are a bit fluffier so the colours blend a bit. Both are delicious though!
Oh, ok! Thank you for the reply!! But veg oil one I find is very nice as it is more fool proof and more refrigerator friendly on the warmer days ❤
Regarding the oil & milk in grams....am I literally placing my jug on a scale and weighing out 100g oil & 145g milk?
(Liquid in grams just seem strange to me)
Why? Seems perfectly normal to me. Cream is sometimes given in grammes, sometimes in ml. Not all liquids weigh 1 g per ml

How much degrees to bake
Groovy 👔🎲 out of interest, what would make you pick oil as the fat content of the cake over butter? Are there any texture/ flavour benefits as I’m just used to butter in cupcakes!
They both work equally well, an oil based sponge does tend to stay moist for a lot longer than butter based 🧁

Not at all - although everyone has a different sweetness tolerance, a good pinch of salt really cuts through the sweetness in the buttercream 👌🏼
Is there anything that has natural food color? All that artificial color would not be good to digest.
You could try using natural colours but they wouldn’t come out nice and bright like this. Luckily I won’t be eating these regularly enough for it to wreck my digestion 😅
