The soup you had there is called "chè khúc bạch", literally translate to white cubes chè, since the cubes originally only has milk flavor. The cube's texture is a cross between panacota and jelly is how I would describe it and the dish usually consist of fruit, almond flakes and ice, the water itself is a light fruit syrup.
