Home brewer here: "Guinness" gas isn't that eclectic in the states...the mixture of CO2 and nitrogen is "beer gas" that is used for any stout faucet, and some systems that have long runs of hosing. The gas mixture can be put under higher pressure, and pushed through the restrictor plate that's in a stout faucet (which also contributes to the fine bubbles). Recently there has been some traditional looking faucets that have a creamer function for CO2 gas: which produces a creamier head....but you don't see the cascading bubbles in the liquid as you would with beer gas. Often times, beer that tastes off means that they're not cleaning their lines frequently enough.

Oh my, there are SO MANY Irish pubs in the Chicagoland area lol...something you need to keep in mind is that many of these places were opened by Irish that have been living in Chicago for 100+ years so are a good 4-5 generations removed from Ireland with many having never actually been to their "Homeland".
As for the friendliness, you should be embraced everywhere in the area, the Irish are loved here so much so there is an Irish reporter on Chicago's own WGN network named Brónagh Tumulty...she is very popular here. She started her career on Northern Sound Radio in Monaghan radio in Ireland.

Scottish Pub in Yakima Washington. .
It was the FIRST Brewpub in the USA since Prohibition. Grants Brewery. Back in 1982, Bert Grant created a great, great Scottish Pub. Scottish eggs and all. Black and Tans. Real ! darts with hammers. the board next to the bathrooms of course lol. I was able to buy my majestic growler travelers, a full liter, and take it home with me. (yes, I had several growlers to fill).
RiP Bert Grant. You are a legend. and RiP to his brew. After his death missteps and skullduggery closed an iconic pub that brewed its own beers.
PS I was just 21 and yes, I got to have several conversations with man himself. I do have to mention one of his passions, Scottish dioramas with pewter mini figures in cases. Bert himself made them and anyone who went to the brewpub will surely remember them.
    Thanks Bert. God Bless ya.

It all depends on how often the pipes are cleaned that go between the pump and barrel. Even if the pint is poured properly it will still affect the way your beer tastes!

Hi, Diane. I'm now retired, but when I was working, my manager and I would walk two blocks to "Michael's Pub" for our lunch. Yes, they served drinks, but we only had them after work hours. Michael was from Dublin, and ran a very nice place, but, he himself wasn't the friendliest guy in town, until he got to know you. Then he would give you the shirt off his back, so to speak. His staff, all three of them, were great with customers. He closed about two years after I transfered to another location. I miss that place, not having found one just like it. So I know what a search you have before you. Good luck. There are many Irish-themed pins here in the Portland, Oregon area, but Michael's was authentic.

A dodgy pint or glass of Guinness is often down to lack of line cleaning, more important when a slow seller as any staleness taints the pipes. Don't know about the US but a cleaner from Guinness came round to pubs in IE and UK weekly just to maintain the lines. Paid for by the Landlord obviously.
That pub also being a corner shop was how many pubs in IE started many years ago, the shop opening the back or living room for alcohol consumption. Many rural pubs have had to go back to doing that just to survive nowadays.

What a place to get bombed that was... they'd give you Viking hats to wear which made you drink even harder lol! Glad you had a good time in Chicago! Way back in the early 90s we used to frequent what we called "turkey bars", so-called because all the drunk Irish men talking sounded like turkeys gobbling to us lol. But these weren't even Irish-themed bars, they were just sports bars that had a huge Irish immigrant clientele. They even passed around the hat for donations to the "football club" which I'm pretty sure was a euphemism for the IRA. 🤔

So, I have a few generations behind me that a would it be three times great-aunt ran a green grocer-pub on Bridge Street in Westport, Cty Mayo. Because of this I wouldn't agree with your only 9 point Irishness-ness for Mrs Murphy's being a fair mark, even though younger people these days don't care as much about all the American Irish trad still going on. Regardless, it warmed my heart to see some of those old reasonably priced grocery items displayed in a Chicago pub. Especially, though, was the music involved there, which seemed an all-day everyday affair.

My guess the staff didn’t really know the history of the pub when it changed hands. In America bars and pubs tend to only have interest in the work done to the building and how long it’s been around that’s it. People tend shy away from any building older than 1970 as it gets more expensive the older buildings become. In Boston only a single building has the age from the first people landing in Plymouth and that’s Union oyster house which has occupied the same building since the 1600s. The oldest building in Florida is the Castillo de San Marcos (fort of Saint Marco) built in the 1600s or 1500s when the Spanish were here. It’s in saint Augustine the oldest still inhabited city in the Americas.

I was a bouncer and bartender for many years and I owned my own Pub in Louisiana and I learned before I bought my Pub I learned that if you don't clean the lines of your draft beer it will taste funny.

American Guinness tastes the same as UK guinness and french Guinness due to the fact that when it is exported from Dublin its pasteurized. The irish bar in Paris was a shrine to Jack Charlton . The best Guinness is obviously in Southern Ireland

Some other subjective options for when you're back in Chicago (if these aren't already addressed in "Part 2")-
North Side- Galway Bay (Galway if actually one of Chicago's "Sister Cities")
    South Side- Shinnick's
    High End- Chief O'Neill's
    Low End- Fuller's -or Shinnick's again :)

I remember my dad, who was in the US Army for 30 years, had a gig at the Springfield Armory in Springfield, Massachusetts. Not the arms manufacturer but the Amory nearby for the national guard in the late 60's early 70's very rough neighborhood, now ruined by gentrification, you can still see the Armory on Google maps, its a historic building. He said, you can tell when you're in a " real Irish bar, because in the middle of the bar would be a giant jar full of money asking for donations for the IRA"..

Theory number 2 about Guiness is that the first place tilted the glass when they pour but the second place did not. When you tilt the glass you get less foam as you pour.

On the taste of draft Guinness, even if it's perfectly poured, the lines that connect the Guinness tap to the Guinness keg have to be purged/flushed with water every night after closing. That's because Guinness has a lower alcohol content than lager, and the low alcohol content means that bacteria grows more easily in the Guinness lines than in lines for lager, where the higher alcohol content inhibits bacteria growth enough that the lines only have to be purged about once a week. So a bar that treats Guinness lines like lager lines (and flushes them once a week instead of every day) will have Guinness that doesn't taste as good.

First of all, I gotta say that it is great that you have finally been able to return to the USA since the pandemic hit. Welcome back Diane!
Next, I'd like to point out that employees/owners of any establishment should show the same courtesy and respect to all of their customers regardless of familiarity. The pub(s) described that contradict this sentiment would definitely fall on my "don't go there" list.
