Macaron Ice Cream Sandwiches Shaped Like An Ice Cream Cone | No Churn Birthday Cake Ice Cream

    Recipe: Makes 16 macaron shells/8 ice cream sandwiches
    130 grams almond flour
    130 grams icing sugar
    90 grams sugar
    100 grams egg whites
    ¼ teaspoon cream of tartar
    1. Sift the almond flour and icing sugar into a large bowl.
    2. Add the egg whites and granulated sugar to a stand mixer bowl. Place it over a pot of simmering water and stir until the sugar has dissolved.
    3. Add cream of tartar and whisk the egg white and sugar mixture until you get stiff peaks.
    4. Add the meringue to the bowl of almond flour and icing sugar. Fold the mixture just until the dry ingredients get incorporated into the meringue.
    5. Divide the mixture equally into three bowls. Add a drop of tan/brown food colouring into one bowl. And pink and purple into the other two. Or whatever colour you like for the “ice cream”.
    6. Continue to fold each bowl of batter until the batter runs off the spatula like lava.
    7. Add each batter to a piping bag fitted with small round tips.
    8. Trace an ice cream cone cookie cutter onto a piece of paper to use as the guide.
    9. Add the paper under parchment paper or a silicone baking mat on a sheet tray and trace the shape starting with the ice cream, then cone. Tap the pan to let out air bubbles.
    10. Let the macarons dry before adding the rest of the ice cream and cone details.
    11. Once all macarons are pipied, let it rest until completely dry before baking.
    12. Bake macarons at 310°F for 12-14 minutes.
    13. For extra detail, melt a little chocolate and add to the top of half of the macarons, add sprinkles on top.
    14. Add ice cream of choice to a small tray so it’s about ½ an inch high. Refreeze before using.
    15. Cut out the ice cream with the same ice cream cone cookie cutter we used for the macarons. Sandwich the ice cream between two macarons. You may need to put the ice cream back in the freezer if it starts to melt.
    16. Refreeze ice cream sandwiches to ensure they’re completely frozen. Enjoy!
