Squash and Dill Spaetzle! Simple German Dumpling Noodles

Welcome back to the channel! After a long hiatus (three months, forgive me!), we are back with a new video - and this one is all about how to make spaetzle! Squash and Dill Spaetzle specifically, where all the flavors of the stew slowly simmer into a rich and flavorful base, ready for the German dumpling-noodles to go right in. This is different than traditional spaetzle, but so fun and so simple to make. Plus a good dinner party trick, if you want to pull out something interesting!
I've collaborated with a new team of really talented directors + videographers, so please let me know what you think. I hope this keeps the recipes looking much more polished as I continue to make cooking videos!

its so fun to see Spätzle referred to as dumping noodles in the video title! Also not to be nitpicky, but Spätzle are usually more longer strands. What you made (which looks so good and delicious) would be called Knöpfle (Knopf means button, the ä and le make it a diminutive, so it's like little buttons- which is pretty accurate i think)!
Love this!! I'm always learning and used the ricer to mimic a spaetzle maker, but the pressing technique can always be longer!
actually that's not true for the whole of german speaking/spätzle eating area - in austria we call them as well spätzle/spatzen when they have this form and not knöpfle!

This was one of the first recipes from your book that I made. I had never heard of spaetzle before, but butternut squash was in season at the time, so I decided to go for it. It was absolutely amazing! Its something I find myself craving pretty frequently these days. I’ve tried it with honey nut squash as well, which personally I loved, but it is very sweet, so maybe not for everyone. This recipe also really turned me on to fresh dill. It has become one of my favorite herbs to use.

@justine_snacks I actually made it again last night! Your cookbook has seriously been a lifeline for me over the past few months. The world seems to be going to hell in a hand basket lately, but when I step into my kitchen and start cooking, I’m able to calm my racing thoughts and feel grounded. Finding your account and getting your book is what helped me really fall in love with cooking and discover how meditative it can be. I’m genuinely so grateful to you for sharing your recipes and your philosophy on food, because it has been keeping me sane.
I will be curious to see how the new production team develops. One of the things that attracted me to your videos and cooking was the sense of lingering calm their pacing provided. I found the amount of cuts in this video to be excessive and not conducive to the appealing calm vibe. Please consider the strengths of the established aesthetic on future edits; thank you.
Yea this was great but i miss the softer more homey vibe of before and the old camera placement :( this was of course wonderful too though

I agree, I really love the casual, gentle feel of previous videos 🥺 I will still watch everything because I love the recipes and I love Justine's personality, but really loved the production style of the past

I needed to laugh when I saw your oven-thermometer hanging there. I have exactly the same modell looking exactly the same 😂 My friend was very confused was this thing is and I explained it to her. She said that's a thing she' ll never need. Now she has a new oven and was very angry about it because of the temperature. Always wrong and a lot burned. So I bought her an oven-thermometer for present. She loved it 😂😂 Good your back. I love your comfort recipes ❤❤❤

Spaetzle are my favorite! I'm half german also. I usually do 3 eggs/1 cup milk/ 2+ cups flour and cut it into the batter with a butter knife. But I think that letting the batter sit for a bit is key, makes them bouncier at the end

a) love your cookbook b) butternut squash is such a pia to peel and deeseed could you not roast it almost all the way then cut in half with the seeds scooped and then do all the things?

@@rachelarnold8839 I want to like dill so badly, it looks beautiful and some of my favorite restaurants put it in gorgeous dishes but for whatever reason my brain/taste buds hate it, i don't know why! I want to like it! Interestingly, i love cilantro!
