The Flippin' Banana was a creation of Michael Matthew ( / michaelmatthew_ ) for the 2022 Mr Black Coffee Cocktail Challenge. He took out top place with this combination of peanut butter, coffee, banana and chocolate in a flip format (spirit + sugar + whole egg). The resulting drink is intensely flavoured, rich and decadent.

INGREDIENTS
- 1.5 oz peanut butter whiskey
- 1 oz Mr Black cold brew coffee liqueur (bit.ly/curiada...)
- 0.5 oz banana syrup (see below)
- 5 dashes of Mexican chocolate bitters
- 1 whole egg
- Garnish with a banana chip
BANANA RICH SYRUP
- 1 ripe banana (about 3 oz)
- 3 oz sugar
- 1.5 oz water
- 1 pinch salt
METHOD
1. Make a banana oleo (sugar on skins). Rest for a few hours.
2. Add water and pinch of salt
3. Gently heat on medium (without boiling) for 5 mins
4. Let cool and bottle

I can't actually get peanut butter whiskey in Japan, so I ended up making my own.
Could you use crème de banana instead of the banana simple and adjust sweetness as needed?

Steve, this looks delicious! The people complaining about the egg are just squeamish, but they probably have had raw egg before and not realized (raw cookie dough, caesar salad, etc.). I've eaten chocolate chip cookie dough my whole life with zero issues! You just have to choose high quality, fresh eggs.
Awesome! We were actually experimenting at our bar last night and made a chocolate banana drink based on the White Russian. Skrewball, creme de banana, half & half, and chocolate bitters. A little sweet for me, but it did taste good!

Yes, as long as they are fresh and clean. It’s the same risk as using the egg white.

I can't get "screwball" here, so i tried to make my own, i melted peanut butter and mixed it with the whisky but after 8 hours nothing got separated as you described, a few hours in the freezer didn't help either everything got solidified together and I barely managed to release some liquid. I think next time I will not mix it just let it sit together.

Very nice cocktail! I've tried it and it was pretty pleasant, but i have to say the banana flavor is very hidden behind the other flavors and i had hard time trying to notice it in the cocktail maybe i should try a different ratio? Any advice?

Steve, this looks amazing! I love flips, and chocolate and peanut butter, so this combo is right up my alley. I may leave out the banana syrup though and just use a demerara or simple syrup.

Why are people worried about eggs?
Some people might not have access to fresh eggs.. and the risk of salmonella may be increased... and others are put off by the texture of a raw egg... having not tried it in a drink before..
Also in America, I'm sure other countries do to, eggs must be washed before offered for sale while washing removes fecal matter which can contain salmonella this can damage the cuticle of the egg which can allow the bacteria to penetrate the shell thus requiring refrigeration. Kind of a double edge sword.. Aquafaba (the juice from canned chickpeas) is a viable alternative.
I used to be until I tried sour that had egg. Only tried it since I saw steve use them all the time. Also yes here in the States it does put people off due to them being known to have salmonella. But I have risked my health doing worst things. So I just go for it.

This is a recipe I have perfected over the last year which now I am proud to promote. You gotta try it. The combination of flavours is unmatched in a cocktail. I call it the Rimijee Cocktail.
15ml gin
15ml slow gin
15ml white rum
15ml dark rum
15ml scotch
15ml triple sec
15ml Chambord
15ml amaretto
30ml lime
15ml sugar syrup
Garnish with two cherries
Linked this to someone because they love the flavours, hadn't watched it yet and they were very triggered as they have an eating disorder, maybe disclaim or keep this in mind in the future please

You can pasteurize your eggs pretty easily using sous vide at 140 F. Hold the eggs at temp for ten minutes (allowing time to equilibrate up front) and then chill in an ice bath.
Use aquafaba
