    Jim Laheys no knead bread recipe:
    -360 grams bread flour (3 cups)
    -1 grams instant yeast (1/4 teaspoon)
    -8 grams salt (1 1/4 teaspoon)
    -300 grams lukewarm water (1 1/3 cups)
    1.Rest for 12-18 hours. Check for lots of holes on the surface of the dough.
    2.Pull in the edges into the centre of the dough. Give the centre a light pinch to seal it.
    3.Proof the dough ball one final time for 2 hours.
    4.Set oven to 220 celsius (430 fahrenheit) one hour before dough is ready and preheat dutch oven or baking tray.
    5.Bake for 30 minutes covering with a lid or metal bowl. Bake for a final 20 minutes with the dutch oven lid or metal bowl removed.
    6.Cool the loaf on a wire rack for at least an hour. Cutting into it sooner can make the inside doughy.

    So I’ve been practicing with sourdough for awhile which is def a bit more practice than yeast and I’ve learned in my experience that the multiple folds requires far more attention and time than kneading in mixer then folding in starter as to not disrupt the starter. I then bulk ferment, do one fold, rest, shape and refrigerate until next day. I pull out and temper and bake and it comes out great. Also using 100% whole wheat no matter what I do just isn’t that good imo so I cut it 50/50 and comes out much better. I also use organic flour which I hear is more finicky.

    Try the "folding" technique; after mixing all of the ingredients together, let it rest 1 hour at room temp, then fold it over itself 4 times and repeat the rest and fold 3 times. Then place it in the fridge for at least 24h. Then bake as usual

    Salt kills the yeast ferment. I try to add salt when forming the dough
