Hi Jessica, Thanks for trying Nepali food! I wanted to clarify a few things: the roasted beans are not peanuts; they are roasted soybeans. It was amazing to see you eat momo with your hands-I eat them that way too, and most Nepalese do as well. The other dark meat in the first plate you tried is goat meat, and the first one you tried was chicken, tempered with fenugreek seeds and other Nepali spices. The distinct flavor of Nepali food comes from fenugreek seeds and Sichuan pepper (Nepali timur), which we use frequently. I hope you will visit Nepal soon!

My hack About the mix related to 2 momo sauce: I would mix about 50% of red sauce into the orange momo sauce. And thats my final sauce. You can go 20 % 30 % or above depending on your tolerance level.

first one you ate was beaten rice and the last one was puffed rice. and last puffed rice which you can call it chatpate, one of the best snaks we Nepali people eat. from young to old, everyone.
1) We make POHA RECIPE with puffed rice. 2) We eat puffed rice with milk..sugar/jaggery....& many sweet kids eat like Revdi, Tilkut etc.. ( like Corn Flakes with Milk )

For your info, instead of Kathmandu khaja it's called Samay Baji which is an authentic cousin belonging to the Newar Community. And that rice is actually beaten instead of puffed. It's beaten rice called Baji in the newari language.
What a great video. Few things to be changed. You have pronounced sekuwa (bbq) as sukuwa. The first puffed rice is actually beaten rice or flattned rice.
Momos and sekuwa, chowmein, khaja set with aachar is my best as well. Pls, Try Newari food as well includes choila, bara, chatamari, samaibaji, and many many more.
Finally, you have found the authentic Nepali restaurant and Nepali taste. We can confirm its very authentic as the restaurant has a chain in Nepal. The only thing you have missed is Nepali national food "Dal Bhaat Tarkari", which most Nepali people consume twice a day. You need to try that one with your hands after proper instruction from the waiters or Nepali people, mixing vegetables and curries together with pickles and meat. That will be your complete overall experience of major dishes of Nepal, with others regional favorites' no so available in many countries. The only thing unauthentic about the restaurant was they served you only 8 pcs of momo, which is a crime in Nepal and every order of momo must have 10 pcs of them. 😁😁😁
