I feel like you try to be even-handed and have an open mind even though as Americans we have some stereotypes ingrained growing up. You didn't ask, but feel like telling, hehe. I've only been once to Kerala, spent 2 days 1 night in Allepey cruising the backwater on the traditional Keralan boathouse. My 3 days 2 nights in the 5 star Leela Resort, facing the windy from the Arabian Sea, was also mesmerizing.
It's Rajasthan in your bucket list in the future. That particular state has lots of forts and palaces, UNESCO world heritage sites. It also has some of the most affordable Rajasthan heritage hotels.
You guys visited Kerala during the hottest month of the year during the hottest summer in decades.
You guys should visit Kerala in Winter. It's a a prototypical tropical paradise. The best parts of Kerala are the villages, not the cities. You have barely scratched the surface of Kerala.
You should visit the North-Eastern states of India if you visit again. Specially Meghalaya and Nagaland. Very little known outside India and you get to see a whole new culture. You will see influence of South east Asia as well in these states

You should have to visit Kozhikode next time if you're visiting kerala again.kozhkode is famous for food it is know as food Capital of kerala and it's the cultural capital of Malabar.there's a beach called kaappad it is very clean and it's my favourite beach

Can you compare travelling in India vs China? According to Canadian media, China is an authoritarian closed society that is dirty and polluted. There is not as much negativity regarding India. You just went to both places so please tell us your perspectives.

They both have their own charm. As a Indian I think China is like 100 years ahead of India in terms of development and in science and technology also they are very much ahead of India. They both are one of the oldest civilization and have strong culture and traditions. Chinese people are known for their hardwork, discipline and politeness, while Indians are know for their friendliness. I think as a society China has much better social welfare system than India and most other countries in the world. They have one of the best public infrastructures and transportation, and India has a lot to catch up on that.
And India has a lot to work on waste management as most places are dirty, while China had the cleanest cities in the world.
Guys i would like to say that there is a mixed people of good and bad everywhere in this part of the world...we must be vigilant!

Kerala is a seafood destination. It has both freshwater and saltwater fishes
I also like Beef. But this overrated love towards Beef in Kerala and it was projected as the "National dish" to make it a political issue after BJP came to power in 2014. Hindus outside Kerala don't like beef, so some people always rub it in against Hindus there. That's the real reason. Before that Porotta was paired with Chicken Fry the most. Even today, Porotta with Chicken Fry is the most consumed dish in Kerala.
Meanwhile Pork is hard to get in Kerala and there was even violent attacks happened in Kerala in the name of Pork, like the school attack in Erumeli. Pork is very rare in North Kerala. Pork is the second most consumed meat in the world after Chicken. And Kerala's own main dishes were always sea foods.
