In my experience, even when gouache is fully dry, if you paint over it with gouache that is at all fluid, it may reactivate the layer underneath, mixing the colors. All the layers on top of the base layer have to be applied using very little water, and be applied with a delicate touch.
He’s using Turner acrylic gouache which is really just acrylic paint with a matte finish so it will be different to work with than a traditional gouache like the M. Graham or Schmincke which are opaque watercolors. Traditional gouache will reactivate and lift with water, just like watercolor paint, whereas acrylic gouache is waterproof once dry.

I have used Gouache for about for years now it is fabulous. I love it.

Was this demonstration with standard gouache or with acrylic gouache my assumption is acrylic. Gouache is not soluble once dry is this true?
