Very nice setup. Consider splitting your wood a little smaller. I know it will burn faster, but you will get more flame hitting the pan bottom and eliminate coal buildup.
Raising your fire up closer to the pans will get more even heat to them. Push the coals to the back and only add wood to the front of the barrel. As a side note, adding any fire brick will increase efficiency greatly. For the condensation, blow the stream out the back. You aren't finding it above the boiler because it's too warm there -- it condenses on the cooler metal toward the front of your shack. Just my .02¢ from my experience. Stupid question time (from Conneticut of course): Since maple syrup requires about 220 degrees to boil down that mighty fine liquid that we all enjoy, and lots of wood to be burned under the pans; would a thermal sand battery also do the trick which heats up to 400 degrees and essentially is heated by just one three wick candle?
I am not familiar with a thermal sand battery but my quick search makes me think it could work but the hotter the better. The 220º number is the temp of the fluid, not the fire though. I have had burns in this barrel stove that have reached 800º and the sap did not go above 213º. It may be worth a try but for the amount of mass you would need to boil the amount of sap most do, it may be more cost effective to do it the old fashioned way and just Reverse Osmosis the sap down to a concentrate to speed it up.
