There are some can light/fan combo fixtures you can put right above the tub to help with moisture. Use good moisture resistant prime and paint above the tub 👍

But I was wondering if there is one place I can look to see your favorites. I am just now starting a family of my own and hoping to get more into film to capture all the special moments. How will you get to the water shut off valves? Usually the access would be behind the shower like in your cabinet
We have access to the plumbing in the closet next to shower + access to the shut off valves in the through a small panel in our basement.

Are you putting cement board behind the new shower?
The grey board we installed on the walls is the option we chose over cement board. It's a waterproof membrane and once all the screws and seams are covered with sealant our tile will be installed directly on top of it.
