Orecchiette with Broccoli Rabe and Sausage POV Cook Along

  • The title says it all!
    You'll need these ingredients:
    3/4 Pound Bulk sausage, or 3-4 decased sweet Italian sausages
    1 bunch of broccoli rabe
    1/2 pound of orecchiette pasta
    about 3/4C extra virgin olive oil total
    red pepper flakes
    fennel seeds
    salt
    Parmigiano Reggiano cheese, grated
    the zest of a lemon
    4 cloves of garlic.
    optional breadcrumbs.

    Judging from your IG stories, I can tell you're a super busy guy, but if you do have more time at home in the future, I (and I think many people), would love to have more videos in this format! They're really helpful, educational, and intimate. Thanks for all that you do!

    Hey Frankie I was first introduced to you through your tastemade videos, which in return brought me to your channel. You have a way of cooking, teaching, and entertaining all at the same time. I wish you taught cooking classes. Or had a small inimate restaurant, where you could interact with people and cooked their food right in front of them!

    I have an extra coffee grinder, uses only for spices. It has come in very handy. I live close to a spice shop and it is cheaper to buy spices whole and in bulk, grind them as I need them.

    the equivalent is about 1 cup of dry pasta per person, depending on shape and how much they eat. You really don't need it to be that precise. I've also never seen someone measure pasta cooking water before, but that is definitely something that someone who has literally never made pasta before would want to know. I think it's easy to forget that at some point, everyone had to make pasta for the first time, and they might be watching these types of videos to figure it out.

      Roger Liem spinach would be good, but I think you want some texture I’d just go with regular broccoli or maybe a mixture of the two

    I add canellinni beans to mine, is that allowed? Speaking of rules I enjoy when you share tips and rules on what the Italians do, everyone knows no cheese on fish but like the no black and red pepper stuff is what I want more of. Im here to learn as much as I can from you!

    Does blanching the rabe in the pasta water impart any flavor to the pasta?

    Try using an old fashioned potato masher to break up meats in the pan pork or beef (Bolognese).

    Frankie I’m so disappointed. I’ve been following you for awhile I loved the jazz music with your buds, I loved when you cooked for them. You seemed really into it . This video seemed like you mailed it in. Is there something going on? Isn’t orecchitte with sausage and broccoli rabe is an old simple peasant dish. Do you think your great great great grandma nonna measured 2 liters of water, or worried about 100 g of pasta for each person so measured 1000ml of water? You think she had a low burner and a high burner, and an induction burner? You think she weighed out 1/2 a box of pasta? Really? I mean Really? This is a simple dish stop over thinking it. I make your mac and cheese all the time , it’s great! That’s what I’m talking about. My challenge to you is to make this dish in one pan without measuring anything like you nonna would have done it. Keep it real

      Sorry you're disappointed, but I also think you're way too deep into the measuring thing. I eyeballed everything and they tried to come up with a number for those who don't like the "quanto basta" technique of Nonna.
