The only difference is that you will take that ground meat (usually pork), season it and squeeze it into a casing. Heck, you can buy "sausage patties", which are just seasoned ground meat patties. Note: I'm not talking about weiners. Those I haven't seen made, but seem quite different. I mean actual sausages, like italian, bratwurst, toulouse, mexican, etc. edit: The difference in texture is because sausages typically DO have a bit more fat than patties and because the fat is being held in by the casing, so it doesn't melt away as much while cooking.
And sausage is typically seasoned while ground beef is not. And them thinking sausage requires a casing is also pretty silly. Most breakfast sausage does not have a casing.
"Flaying" a sausage is a thing, cuz you can use the sausage meat to cook certain dishes. One of my favourite pasta dishes requires italian sausage meat and I can't get that here unless I buy it as sausages.

Zylus is correct, don't limit yourself to what you're having for breakfast or what meals, cereal tastes best at night anyway as supper, and I use to have to make dinner for breakfast because of the hours of my job and the trash tiny lunch they give for a 10 hour shift just to have energy to get through the day.

Using minced meat with a lower fat content (leaner mince) can cause issues with the burger/meatball holding its shape. In this case, an egg can be used to help the mixture keep its shape

Sausagemeat is not put in a casing of skin. Most sausages are made with pig intestines or sheep intestines. However there are a lot of sausages that are made with a artificial casing.
