Like I said... we make steaks every week and we have been working on creating the perfect steak recipe and I think that we have finally done it. For this video I used delmonico ribeye steaks, but you can use this same method for any steak.
I start by pat drying the steak with paper towel. I then take a small amount of olive oil or avocado oil and baste the steak with it. I used a homemade rub on this but any steak rub or something as simple as SPG (salt pepper garlic) would suffice. Make sure that the rub is sticking to the surface of the steak and let the steak rest at room temperature for 15-20min while you get the grill going.
In this video I am using my Camp Chef SmokePro SG24 WIFI. I smoked the steaks at 200F and smoke level 10 until the internal temperature was 110F. Once it reaches 110F remove the steak from the grill and spread Mayonnaise on the steak... yes I said Mayonnaise! This is the point where some of you die-hard steak lovers will disown me... but trust me on this! Now that you've got the mayo steak ready lets the get cast iron griddle hot. For this I used my Camp Chef Sidekick with the cast iron griddle at Med-High heat. I seared each side until the perfect crust had formed. Removing the steak at 110F from the grill and searing it momentarily on each side will produce an awesome Medium-Rare steak! Keep in mind that the thickness of the steak will determine how much additional cooking will take place during the sear. For a thicker cut steak you may want to smoke up to 115F, whereas a thinner steak 100-105F. I will let you be the judge.
This mayo steak is absolutely the perfect steak. The crust on this steak is incredible and extremely flavorful. This steak is super juicy and tender and is the perfect medium rare steak!

This is the first steak video I've ever shared on social media. The reason is that everyone does it the same way: kosher salt and black pepper. "You don't wanna mask the flavor of blah blah blah". These guys aren't afraid to season a steak. Never seen avocado oil on a grill. Finally something new. Great job, guys.

Just subscribed after watching three of your videos! Awesome looking steaks can't wait to try this method. I'm brand new to cooking on the Camp Chef. About how long did you have the steaks on the smoker before they got to 110 degrees?
To be honest I don’t always pay attention to the time. It’s probably around the 30min mark or so
Great video, brother. On a side note, I've tried every single steak rub recipe I could get my hands on, or dream up myself. After much trial and error, I've discovered what I believe to be the absolute perfect rub to compliment a good quality ribeye steak. In fact, of all the rubs I've tried, even the best of them don't compare to this single rub recipe, and I'm happy to share it right here. A good quality course sea salt and pepper. That's it! Just a good quality course sea salt, like Maldon flake sea salt, and some fresh cracked black pepper. For some reason, those two simple ingredients shine better than anything else I've thrown at ribeye steaks. Everything else just seems to bury that awesome fatty beefy flavor a good quality ribeye steak has to offer. However, everyone's tastes are different. I love a good complex rub on some cuts of meat, such as a brisket or a flank steak, but when it comes to ribeye, I just can't justify throwing anything on there that competes with what I believe is near perfection right from the cow. Keep up the great work, my friend.

My set up is a little different, but im going to adapt minus the griddle. Got my steaks seasoned and coming to room temp now. Gonna try the mayo but flame seared. I think you may be an evil genius. I'll update later
I have the sear box with the grill grates. Does the mayonnaise work in that case?

NICE!! never tried mayo as i'm a grill mark person BUT I can always flip my"GrillGrates"over to the flat side and try that with DUKES(I'm in S.C).Is your rub going to br like an SPG all purpoae or more of a beef rub?? Anyway nice job again
I could see my rub to be more all purpose. At this time I have only tried it on steak, but I’ll be trying on chicken here soon! The Mayo sear is 👌🏼
I'll have 2 experiment with the mayo I love Hellmans like a fat cop on a free donut! I use a blend of extra virgin olive oil and grass fed butter in a cast iron skillet to get a crispy crust on my grilled cheese sandwiches👍🏾

Guga method yeah,that works great.BTW the CC SG24 Wifi is cheaper then the woodwind and yoiu can get the searbox with it
I actually have the deluxe grill box but I use that with my Pro60x when I go camping or hunting. I personally like the Sidekick because of the versatility that I get with it!
Have to admit, I thought you had lost your mind re the mayo before the reverse sear. However, said he hasn't steered me wrong yet with his other recipes, or smoking tutorials, and decided to try it.
Man, Mayo is now part of all my steak reverse sear recipes... It works and adds an incredible crust to any steak.

Today will be my first time cooking on a pellet grill. Timings for everything would be great
I had the pit boss pro and it would smoke a minute then stop then start then stop all through the cook. The smoke flavor was weak at best. Do you have any of these issues with you smoker
Pellet grills typically have those periods of no smoke… just the nature of the beast. I will say that I have the best results when I use quality pellets. I’ve found that Lumberjack has some

FYI, one little tip about mayonnaise. In my opinion, NOTHING beats the taste of Hellmann's mayonnaise. However, I noticed something. I was running pretty low on my jar of Hellmann's, so when I was at the store, I figured I'd give the squeeze bottle a try. I instantly noticed the flavor was vastly different than the jar. I still had a couple of tablespoons worth left in the jar, so just to make certain I wasn't just imagining it, I did a side by side taste test, and I was right, they simply taste different, and just to make certain, I had my wife taste them both, and she agreed, the jar tastes so much better. I don't know what they do differently, if it's something with them thinning it out slightly to make it easier to dispense from the squeeze bottle, or if they do anything different at all, but there was no denying they tasted different. In my opinion, they are not the same product. It was literally like tasting two different brands of mayo. Just thought I'd throw that experience out there. On a side note, I will be trying your may trick. Looks interesting.

It depends on the thickness and the temperature of the steak when it’s going in… But under an hour, usually.
So may people hate Mayo. Im 90% anti mayo myself. Still might try this on the MB 1050. I don't have a sidekick for my camp chef........yet

@@tigerflyoutdoors7315 Well that's wrong. lid up on start up and lid down on shut down. When you start it up let it roll smoke and when you hear or see the fire the smoke will stop and you can close the lid.
@@crowtoon been cooking on the grill for 6 months with no issue. Thats what the manual says. Not wrong buddy.
@@tigerflyoutdoors7315 That’s what my Woodwind likes with no issues in 3 years. My lid blew open one time doing like you do when I first got it. Just be careful because it will scare the crap out of you if it happens. Happy grilling .

Msyo is eggs and oil. I use butter. I dont want a rub on a steak either. I would have rather seen the SG30 direct heat sear. I can sear it in the kitchen too; I don't need a a sidekick and gas.

No on the mayo. You could just use lard.
Can you actually taste the Mayonnaise? This looks like an awesome crust but I hate the taste of mayonnaise.
