coconut oil makes it so it can still set, normal chocolate won't set at room temperature once melted because it's tempered. coconut oil helps keep it tempered through the melting process

Oooh my fav tip is to put just a bit of coconut oil in with the chocolate chips so you don’t burn them. I have no clue why it works, but it works.
Most oil has a higher tolerance to heat so by adding a oil with a high tolerance to heat it helps stabilize the chocolate so it doesn’t burn or break
