      it's a really cool explanation, but as a pastry chef here I'd recommend you to heat up the mixture just until it boils, that causes the sugar tu crystalize in particular ways and then bring it down to about 35°f at the fridge for 8hrs before churning the icecream, it will increase it's texture and stability

    Nice presentation - instructive and entertaining (not to mention mouth-watering) - one very important instruction the host did not mention was just after the beginning when she took the freezing bowl out of the freezer - she should have emphasized that the churning process should be started as soon as possible so that this freezer bowl has not begun to thaw out just sitting idle on the countertop...the bowl must be as cold as possible during the churning process.

    I have the older version of the ice cream maker that I have been using for years. Two years ago it started leaking at the manufacture seam, underneath one of the handles that go to the larger stand mixer. (Heard this was common in the older model freeze bowl). I used a commercial grade plastic glue to fix. Was wondering if you have had or know anyone that had this happen with the newer freeze bowls?

      Hi Sandra - I'm not sure about altitude and ice cream - I hadn't heard of any issues with that before. You do want to make sure your ice cream bowl is completely frozen - keep in the coldest part of your freezer (I always do 24 hours.) Also make sure you ice cream mixture is super chilled in the refrigerator.

  • @briancooney9952
    @briancooney9952 5 місяців тому

    I set it a little faster than that now. My first batch i made, i set the mixer to like 3 or 4 (mine doesn't have a "Stir" setting. It seemed to take forever to freeze, but it didn't bind up and the ice cream came out great.
    My second batch, i set it slower because i'd read somewhere that it freezes quicker, and that the stir setting is the equivalent to 2 on mine. SO i set it to 2, and after about 10 minutes... it slowed down for a second, then BOOM, the dasher froze to the bowl and snapped the cheap plastic coupler.
    Just now, i made a batch of coffee ice cream, used #3 setting, a little fast, but it came out perfect after like 20 minutes. Doesn't taste all that good because i just used cheapo coffee. I need to get something a little darker roast next time, for the flavor to come through.
    If i had to buy this attachment again, i would not. It's only a matter of time before that cheap plastic coupler breaks again. Kitchen aid doesn't actually sell a replacement part. You have to message them and beg them to send you another. So if that part breaks and they don't send you a replacement, just throw away the whole thing, because it's useless without that part.

    • @epicuricloud
      @epicuricloud  5 місяців тому

      Did you reach out to customer care? Yes, you need to stop the churning once the mixture is thick and/or if you hear the dasher assembly click.

    • @epicuricloud
      @epicuricloud  Рік тому +2

      Hi Rena - It really depends upon what mixture you're making. If it's a cooked mixture - I'd make the day before. For completely uncooked mixtures, you can just put it back in the fridge once everything is mixed up and get it fully chilled. (I didn't hear myself say 30 minutes) but you can certainly check it at 30 minutes and make sure it is chilled.

      The closer to 32°F the mix is before putting it into the ice cream maker, the smaller the ice crystals that form which means smoother ice cream.

    • @epicuricloud
      @epicuricloud  Рік тому

      Hi Marsha - Generally when I hear of this happening - It's the bowl not being completely frozen or the mixture not being chilled enough. I recommend freezing the bowl for 24 hours in the coldest part/setting of your freezer. And also make and chill your ice cream mixture the day before. Also make sure any sugar in the mixture is completely dissolved. Hope that helps!

With pints of premium ice cream going for 5 - 8+ dollars a pint - this recipe makes about 3+ pints worth. Sure you can buy a bargain gallon of ice cream for cheap, but you're paying for a lot of sketchy ingredients, gums and air. Take care!

    Oddly enough, the bowl won't fit on my Pro 6000 with the nipple facing the back. If I put it that way, the ears don't line up with the lift arms.
    Also, I'd say the most difficult thing about this bowl is pouring your ice cream base in while it is running. That "gap" isn't very wide between the bowl and the mixer head.

    The ice cream attachment for Kitchenaid is the only one I will not buy. In order for it to work, you have to have room in your freezer to prep it. It's far easier to make ice cream without it. Honestly, you only need condensed milk, whipping cream and flavoring to make ice cream in 5 minutes.
