Some of my fondest memories are from Bush. I took friends and family there, but mostly loved it because people from all walks of life from all over the city gathered to drink, sing, have fun. There’s nowhere quite like it.
There could be a feature length doc on Bush Garden and its impact on the culture and cuisine of Seattle. The Canlis family, if I understand correctly, was highly influenced by the Bush Garden experience when they created Canlis.
Peter Canlis had run Canlis Charcoal Broiler in Honolulu since 1946, and opened Canlis in Seattle in 1950. Kaichi Seko opened Bush Garden in 1953, AFTER Canlis opened.
Sad. Beautiful place. I am all for developing, I work construction, yet it must be done in a way that builds on our traditions. Anything else, well let us just rename the city too. 😥
