You should avoid playing f3/f6 in the opening. There are rare exceptions, but it opens up all sorts of checks along the e1-h4 / e8-h5 diagonals and deprives the knight of a development square. Just avoid playing those moves, and you can save yourself a lot of trouble. When you hit 1000 ELO or so, you can re-evaluate the situations where those moves might be beneficial.

And if he takes back with the pawn it hurts the pawn structure. So he made a good move

Value of any position in chess works in that order and you can think about the importance of a move by first asking “does this make my king safety or my opponents king less safe? Does this move give me a material advantage. Does this move make my pieces more active or my opponent pieces less active. Does this move create more space for my pieces to move? King safety is more important than anything. If you are adding up to 10 king safety is worth at least 5 points in general but all 10 if there is a forced mate in X. If your king is safe and opponent is not I dont care what else is going on, you have at least a slight advantage or maybe equal if opponent is awesome everywhere else. So in the opening of the first game, you did all these moves and none of them addressed the king safety until it was too late to castle, so you lost.
Your grand plan 2nd game can be improved by taking with queen first then queen to h1 is mate on next move rather than giving opponent an extra move to try to block the threat or escape.
The issue with low Elo chess is you kind of want to learn theory but when your opponent deviates from theory on move 1 you’re kind of SOL. You should really focus on basic principles and tactics, I think. That way you can win games when people deviate from theory.
