A bit of ammonia is used in the fried dough (Pa Tong Khow). It helps fried create the air balloon inside and if used in the right amount it will be evaporated by the heat. However, you should avoid the fried with a strong ammonia smell since it can harm your tissue. Leave it cold (but not too cold) helps to let it evaporate.
